Add onions and saute about 5 to 10 minutes. Over medium high heat, they will brown deeply and almost char in spots.<\/p>\n<p>Reduce heat to low and once pan has cooled slightly, add garlic, chiles, cumin and oregano and cook 2-3 more minutes. Remove from heat and reserve.<\/p>\n<p><strong>Step 2:\u00a0 Cook Potatoes<\/strong><\/p>\n<ul>\n<li>2 med. potatoes, diced to \u00bd\u201d<\/li>\n<li>1 qt. pork (or chicken) bone broth, fat skimmed and reserved<\/li>\n<\/ul>\n<p>While the onions saute, combine potatoes and bone broth in a soup pot, cover and bring to a boil. Reduce heat and simmer until potatoes are tender but not mushy.<\/p>\n<p><strong>Step 3:\u00a0 Mix and Simmer<\/strong><\/p>\n<ul>\n<li>1 28-oz. can diced tomatoes, with juice<\/li>\n<li>\u00bd to 1 cup diced tomatillas (optional)<\/li>\n<li>Salt and freshly ground pepper, to taste<\/li>\n<\/ul>\n<p>Add to cooked potatoes, along with reserved onion mixture. Cover, bring to a boil, then reduce heat and simmer another 5-10 minutes for flavors to meld.<\/p>\n<p><strong>Step 4:\u00a0 Thicken Chili (Optional Step)<\/strong><\/p>\n<ul>\n<li>2 Tbsp. olive oil (or reserved pork fat, see Notes)<\/li>\n<li>2 Tbsp. whole wheat flour<\/li>\n<li>\u00bc to \u00bd cup water<\/li>\n<\/ul>\n<p>In a small mixing bowl, whisk together olive oil and flour, gradually adding water to form a smooth paste.\u00a0 Add to chili, whisking continuously to avoid lumping.\u00a0 Cover and simmer about 5 more minutes until chili is thick and no longer tastes of raw flour.<\/p>\n<p><strong>Step 5:\u00a0 Accessorize<\/strong><\/p>\n<ul>\n<li>Freshly squeezed lime juice<\/li>\n<li>Chopped fresh cilantro (optional, but good!)<\/li>\n<\/ul>\n<p>Taste and add more seasonings, if needed. Serve immediately with fresh lime juice and cilantro to taste, if using.<\/p>\n<p><span style=\"color: #008000;\"><strong>NOTES<\/strong><\/span><\/p>\n<p><strong>1.
