{"id":1207,"date":"2011-09-28T17:22:32","date_gmt":"2011-09-28T17:22:32","guid":{"rendered":"http:\/\/cookhappylivehealthy.org\/blog\/?p=1207"},"modified":"2017-11-08T15:36:53","modified_gmt":"2017-11-08T15:36:53","slug":"how-to-bread-fish-meat-and-vegetables","status":"publish","type":"post","link":"https:\/\/cookhappylivehealthy.org\/blog\/how-to-bread-fish-meat-and-vegetables\/","title":{"rendered":"How to Bread Fish, Meat and Vegetables"},"content":{"rendered":"<h2><span style=\"color:#cc6600;\">One building block cooking technique, dozens of dishes<\/span><\/h2>\n<p>Here at EveryDay Good Eating, we like to take the mystery out of cooking.\u00a0 We believe everyone can make&#8211;and deserves to enjoy&#8211;deliciously healthful food, everyday.\u00a0 That&#8217;s why we teach basic, building block cooking techniques that can be mixed and matched to create a wide range of dishes.\u00a0 Breading is a perfect example.\u00a0 It&#8217;s an easy and inexpensive technique that can be applied to lots of different foods to create dozens of different dishes.<\/p>\n<figure style=\"width: 240px\" class=\"wp-caption alignright\"><a href=\"http:\/\/cookhappylivehealthy.org\/blog\/2011\/09\/28\/recipe-breaded-eggplant-with-herbed-tomato-topping\/\"><img loading=\"lazy\" decoding=\"async\" title=\"Breaded Eggplant with Herbed Tomato Topping\" src=\"http:\/\/i722.photobucket.com\/albums\/ww230\/mcolletterogers\/BreadedEggplantBakedTomatoTopping250.jpg\" alt=\"Breaded Eggplant with Herbed Tomato Topping\" width=\"250\" height=\"269\" \/><\/a><figcaption class=\"wp-caption-text\">Breading eggplant adds fast elegance to this somewhat bland vegetable, creating a perfect palette for a fresh tomato topping<\/figcaption><\/figure>\n<p><strong><span style=\"color:#800000;\">Why We Love Breading<\/span><\/strong>\u00a0 Who doesn&#8217;t end up with bread crusts that no one wants?\u00a0 Turn them into breadcrumbs and they won&#8217;t end up creating environmental havoc in a landfill.*\u00a0 Meanwhile, you&#8217;ll save grocery dollars and end up with a form of kitchen gold.\u00a0 Coat an ordinary food with breadcrumbs and suddenly it gets a welcome flavor boost and becomes something special, especially beneficial for blander foods like eggplant and zucchini.\u00a0 Breading also helps retain moisture for delicate foods like fish and chicken breasts that dry out\u00a0 easily when cooked.<\/p>\n<p><strong><span style=\"color:#800000;\">Basic Breading Technique\u00a0<\/span><\/strong><\/p>\n<ol>\n<li>\n<figure style=\"width: 240px\" class=\"wp-caption alignright\"><a href=\"http:\/\/cookhappylivehealthy.org\/blog\/2011\/09\/28\/recipe-breaded-eggplant-with-herbed-tomato-topping\/\"><img loading=\"lazy\" decoding=\"async\" title=\"Dipping Eggplant in a Wash\" src=\"http:\/\/i722.photobucket.com\/albums\/ww230\/mcolletterogers\/EggplantDippinginHerb-MayoWash250x174.jpg\" alt=\"Dipping Eggplant in a Wash\" width=\"250\" height=\"174\" \/><\/a><figcaption class=\"wp-caption-text\">Step 1: Dip the food in a &quot;wash,&quot; here a mixture of olive oil, milk, mayonnaise and fresh herbs<\/figcaption><\/figure>\n<p>Dip a food in some kind of &#8220;wash,&#8221; like egg or milk<\/li>\n<li>Coat it with breadcrumbs<\/li>\n<li>Fry or bake until the breading browns and crisp.<\/li>\n<\/ol>\n<p>Those are the basic elements of breading, although you&#8217;ll see dozens of variations in recipes.\u00a0 Sometimes, sturdier and moister foods (like chicken breasts) aren&#8217;t dipped in a wash at all, or foods are dipped in flour before the wash.\u00a0 The liquids used for a wash can vary from recipe to recipe.\u00a0 Finally, delightful variety can be achieved by including herbs, spices and other flavors with the breadcrumbs or by swapping the crumbs for different flours, cornmeal, crushed corn flakes or cracker crumbs.<\/p>\n<figure style=\"width: 240px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" title=\"Dipping Eggplant in Whoel Grain Breadcrumbs\" src=\"http:\/\/i722.photobucket.com\/albums\/ww230\/mcolletterogers\/EggplantDippinginCrumbs250x176.jpg\" alt=\"Dipping Eggplant in Whoel Grain Breadcrumbs\" width=\"250\" height=\"176\" \/><figcaption class=\"wp-caption-text\">Step 2: Coat the slices in finely ground breadcrumbs. Here we used whole grain, gluten free crrumbs.<\/figcaption><\/figure>\n<p><strong><span style=\"color:#800000;\">Making It Healthy<\/span><\/strong>\u00a0 Breaded foods are often equated to unhealthy foods.\u00a0 Think chicken nuggets, fish n&#8217; chips and eggplant parmigiana style.\u00a0 These\u00a0 foods are coated thickly with white breadcrumbs then thrown in a deep frier where they absorb ungodly amounts of bad fats.\u00a0\u00a0 Don&#8217;t let these examples dissuade you from experimenting with this easy and delicious technique.<\/p>\n<ul>\n<li>Simply use a 100% whole grain breading, whether that&#8217;s breadcrumbs, flour, cracker crumbs, etc.\u00a0 While whole grain breadcrumbs can be difficult to find at grocery stores, they are easy (and free) to make.\u00a0 <a title=\"How to Make Healthy, Whole Grain\u00a0Breadcrumbs\" href=\"http:\/\/cookhappylivehealthy.org\/blog\/2011\/09\/28\/how-to-make-healthy-whole-grain-breadcrumbs\/\">Check out this blog on making breadcrumbs<\/a>, paying particular attention to the note on giving them a second &#8220;Fine Grind&#8221; after they are dried.<\/li>\n<li>Fry in healthful oils, like olive and safflower.<\/li>\n<li>Use moderate amounts of oil.\u00a0 Surprisingly, browning can be achieved nicely with just a tablespoon of oil.\u00a0 Be sure the oil is very warm to hot (but not smoking) before adding the food so it isn&#8217;t just absorbed by the breading.\u00a0 Although the second side will brown well enough in the skim of oil remaining after the first side is browned, additional oil can be added to brown the second side more thoroughly.\u00a0 In this case, remove the food after browning the first side, scrape out any remaining bits so they don&#8217;t burn, add another tablespoon of oil and heat before adding the food on its second side.<\/li>\n<li>\n<figure style=\"width: 240px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" title=\"Preparing Breaded Eggplant for Baking\" src=\"http:\/\/i722.photobucket.com\/albums\/ww230\/mcolletterogers\/EggplantBreadedUnbaked250x255.jpg\" alt=\"Preparing Breaded Eggplant for Baking\" width=\"250\" height=\"255\" \/><figcaption class=\"wp-caption-text\">Step 3: Fry or bake.  Here the eggplant is baked, but because of the oil in the wash, there was no need to spray slices with additional oil to get a nicely browned crust.<\/figcaption><\/figure>\n<p>Bake as an alternative to frying.\u00a0 The hot air circulating in an oven does a great job of browning and crisping breaded food, if the weather isn&#8217;t too hot for turning on this appliance.\u00a0 Best results are achieved by spraying the food with a little oil before baking.<\/li>\n<\/ul>\n<p>Ready to try a breaded dish?
