rounds<\/li>\n<\/ul>\n<p><strong><span style=\"color:#6820ab;\">Step 4:\u00a0 Bread the Eggplant<\/span><\/strong>\u00a0\u00a0 Lightly oil a cookie sheet with olive oil.\u00a0 Using your hands, slather each eggplant slice with the mayonnaise wash, then lay each side in crumbs, lightly patting crumbs so they stick into the wash.\u00a0 Lay on oiled cookie sheet.<\/p>\n<p><strong><span style=\"color:#6820ab;\">Step 5:\u00a0 Bake\u00a0 <\/span><\/strong><span style=\"color:#000000;\">Place<\/span> cookie sheet in oven and bake eggplant about 5-10 minutes, until slices are lightly browne<span style=\"color:#000000;\">d and tender when stuck with a fork.\u00a0 Remove slices to a serving platter.\u00a0 While eggplant bakes, prepare Tomato Topping.\u00a0 <\/span><strong><span style=\"color:#6820ab;\"><br \/>\n<\/span><\/strong><\/p>\n<p><strong><span style=\"color:#6820ab;\">Step 6 Prepare Quick-Cook Tomato Topping<\/span><\/strong><\/p>\n<ul>\n<li>1 Tbsp. olive oil<\/li>\n<li>1 lrg. onion (preferably sweet) diced to \u00bc\u201d<\/li>\n<li>4-6 med. cloves garlic, minced<\/li>\n<li>1\/8 tsp. red pepper flakes (more or less, to taste)<\/li>\n<\/ul>\n<figure style=\"width: 240px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/i722.photobucket.com\/albums\/ww230\/mcolletterogers\/EggplantBaked250x189.jpg\" alt=\"\" width=\"250\" height=\"189\" \/><figcaption class=\"wp-caption-text\">Bake eggplant until lightly browned and tender when stuck with a fork<\/figcaption><\/figure>\n<p>Heat oil in a large saute pan over medium heat.\u00a0 Add onions and saute until lightly browned.\u00a0 Add garlic and pepper flakes and saute another couple minutes, then stir in the following:<\/p>\n<ul>\n<li>2 cups vine-ripe, farmers market tomatoes cut into \u00bd -1\u201d dice (or 1 pint cherry tomatoes, halved)<\/li>\n<li>1 tsp. sugar<\/li>\n<li>Sea salt and freshly ground pepper, to taste<\/li>\n<\/ul>\n<p>Bring to a simmer and cook just 5 minutes until tomatoes just begin to soften.\u00a0 Remove from heat promptly and stir in:<\/p>\n<ul>\n<li>\u00bd cup fresh, chopped basil (or the same mixture of herbs used in mayonnaise wash)<\/li>\n<\/ul>\n<p><span style=\"color:#6820ab;\"><strong>Step 7:\u00a0 Assemble and Serve<\/strong><\/span>\u00a0 Top each baked eggplant slice with a spoonful of tomato topping and serve immediately with:<\/p>\n<ul>\n<li>Freshly grated Parmesan or crumbled feta cheese (optional garnish)<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Breading is a good way to begin getting to know eggplant, since the breadcrumb coating adds familiar flavor and a nice texture.\u00a0 Those who are experienced eggplant eaters will also like the possibilities presented by a nice breaded eggplant fillet.\u00a0 Layer, roll or top with different sauces, cheeses and nuts for some fast but interesting &#8230;
