{"id":1398,"date":"2012-07-24T21:41:04","date_gmt":"2012-07-24T21:41:04","guid":{"rendered":"http:\/\/cookhappylivehealthy.org\/blog\/?p=1398"},"modified":"2017-11-08T16:03:59","modified_gmt":"2017-11-08T16:03:59","slug":"affordable-organics","status":"publish","type":"post","link":"https:\/\/cookhappylivehealthy.org\/blog\/affordable-organics\/","title":{"rendered":"Affordable Organics?"},"content":{"rendered":"<h3>Learning to Double Your Vegetable Dollars Is the Secret<\/h3>\n<p>&#8220;I&#8217;d like to buy organic vegetables, but they&#8217;re so expensive.&#8221;\u00a0 Ever catch yourself dreaming of more affordable organics?\u00a0 Try this on for size:\u00a0\u00a0 What if, every time you purchased an organic vegetable, you actually got not just one but two or three vegetables?\u00a0 No doubt that would make the\u00a0 economic equation a lot more attractive.<\/p>\n<figure style=\"width: 182px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" title=\"Red Wagon Beets, Golden and Red\" src=\"http:\/\/i722.photobucket.com\/albums\/ww230\/mcolletterogers\/beets--redwagon_crop.jpg\" alt=\"Red Wagon Beets, Golden and Red\" width=\"192\" height=\"257\" \/><figcaption class=\"wp-caption-text\">Red Wagon Beets, Golden and Red\u00a0 (Picture Courtesy of Red Wagon)<\/figcaption><\/figure>\n<p>Here&#8217;s how to make that his kind of magic happen:\u00a0 Waste Not.\u00a0 For example, in last week&#8217;s Farmers&#8217; Market Excursion class, we made beet relish, using a gorgeous bunch of organic red and golden beets from <a href=\"http:\/\/www.redwagonorganicfarm.com\/\" target=\"_blank\">Red Wagon Farm<\/a>.\u00a0 The bunch cost $4.00, but<\/p>\n<ul>\n<li>we made enough relish for two meals,<\/li>\n<li>the next day, the beet greens were the centerpiece for another meal, and<\/li>\n<li>the following day the beet stems went into a lentil soup.<\/li>\n<\/ul>\n<p>In other words, that&#8217;s four meals&#8217; worth of vegetables for $4.00, or <strong>$1.00 per meal for amazingly delicious, don&#8217;t-harm-the-environment, don&#8217;t-harm-me, super-nutritious vegetables<\/strong>.<\/p>\n<figure style=\"width: 164px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/i722.photobucket.com\/albums\/ww230\/mcolletterogers\/Beets--RedWagonPurchasing-crop.jpg\" alt=\"Beets with luch, full beet greens\" width=\"174\" height=\"183\" \/><figcaption class=\"wp-caption-text\">People in my classes always exclaim, &#8220;You really don&#8217;t waste anything!&#8221; In our food culture which routinely wastes tons and tons of food, I guess my actions do seem odd: Retrieving kale stems when class members mistake them for compost, saving the ends of grated ginger root for tea, stuffing onion ends and skins into a bag to make my own (very cheap) broths. But maybe it&#8217;s time for the new, less-wasteful food culture that <a href=\"http:\/\/everydaygoodeating.org\/mission.html\" target=\"_blank\">Every Day Good Eating<\/a> is bringing about.\u00a0 (Picture Courtesy of Red Wagon)<\/figcaption><\/figure>\n<p>Bear in mind, too, that this was no ordinary bunch of limp beets with scraggly tops.\u00a0 They were firm and dense, the tops lush and huge and the stems plentiful.\u00a0 Every part of the beet was rich with flavor&#8211;leaving the taste buds completely satisfied and providing plenty of vegetable nutrition.\u00a0 Could anyone really argue that\u00a0 $1.00 per meal is &#8220;too expensive&#8221; for this caliber of vegetable?<\/p>\n<p>&#8220;You get what you pay for&#8221; is a universal law.\u00a0 Pay little and you get little.\u00a0 Happily, it works the other way, too, however.\u00a0 Pay a fair price and you get a fair&#8211;often more than fair&#8211;product.<\/p>\n<p>Now that you know the magic that makes organic affordable, begin learning how to use all parts of a vegetable.\u00a0 Join us for our <a href=\"http:\/\/everydaygoodeating.org\/nkcalendar-register.html\" target=\"_blank\">last class on beet relish at Isabelle Farm<\/a> on Thursday, July 26.\u00a0 Then check out the next blog for a quick way to use beet greens.\u00a0 For the stems, just saute and toss them into your favorite lentil soup (which could be a canned variety, too.)<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Think organics are too expensive?
