{"id":1404,"date":"2012-07-24T21:33:11","date_gmt":"2012-07-24T21:33:11","guid":{"rendered":"http:\/\/cookhappylivehealthy.org\/blog\/?p=1404"},"modified":"2012-07-24T21:33:11","modified_gmt":"2012-07-24T21:33:11","slug":"recipe-sauteed-beet-greens-composed-with-toasted-walnuts-bacon-bits-chopped-egg","status":"publish","type":"post","link":"https:\/\/cookhappylivehealthy.org\/blog\/recipe-sauteed-beet-greens-composed-with-toasted-walnuts-bacon-bits-chopped-egg\/","title":{"rendered":"Recipe:  Sauteed Beet Greens composed with Toasted Walnuts, Bacon Bits, &#038; Chopped Egg"},"content":{"rendered":"<p style=\"text-align:center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" title=\"Sauteed Beet Greens\" src=\"http:\/\/i722.photobucket.com\/albums\/ww230\/mcolletterogers\/beetgreenseggwalnutginger-Crop.jpg\" alt=\"Sauteed Beet Greens\" width=\"427\" height=\"316\" \/>This unusual\u2013but very tasty and super nutritious\u2013dish makes a nice light supper, or breakfast or lunch, especially if you play around with some of the options in the notes below.<\/p>\n<h3><span style=\"color:#800000;\">Sauteed Beet Greens composed with Toasted Walnuts, Bacon Bits, &amp; Chopped Egg<\/span><\/h3>\n<ul>\n<li>1-2 slices bacon<\/li>\n<\/ul>\n<p><strong>Cook Bacon\u00a0<\/strong> Lay bacon in a medium-sized, heavy bottomed skillet, turn heat to medium and cook until bacon is browned on both sides.\u00a0 Remove to a cutting board, gently shaking off excess fat into pan, and cut into \u00bd\u201d dice.\u00a0 Reserve.<\/p>\n<ul>\n<li>1 med. onion, diced to \u00bc\u201d<\/li>\n<li>1-2 tsp. freshly grated, loosely packed ginger, to taste<\/li>\n<\/ul>\n<p><strong>Saute Onion and Ginger<\/strong>\u00a0 Pour off all but 1 Tbsp. bacon fat (reserving excess in a jar for another use), then reheat over medium heat until fairly hot but not smoking.\u00a0 Add onion and saute about 5-7 minutes until lightly browned, stirring occasionally.\u00a0 Add ginger and continue cooking and stirring occasionally, just 1-2 more minutes.<\/p>\n<ul>\n<li>4 cups loosely packed beet greens, chopped into roughly 1-2\u201d squares<\/li>\n<li>Sea salt and freshly ground pepper, to taste<\/li>\n<\/ul>\n<p><strong>Saute Beet Greens<\/strong>\u00a0\u00a0 Stir beet greens into onions along with any water clinging to leaves from washing.\u00a0 Cook over medium heat until wilted and tender, stirring occasionally, about 5-8 minutes.\u00a0 Season with salt and pepper.<\/p>\n<ul>\n<li>2 large eggs, softly hard-boiled, diced to roughly \u00bd\u201d<\/li>\n<li>\u00bc cup walnut pieces, toasted<\/li>\n<\/ul>\n<p><strong>Compose Dish\u00a0\u00a0<\/strong> Arrange beet greens in the bottom of a wide bottomed bowl.\u00a0 Arrange walnuts in a ring around the outside of greens and eggs in a ring nearer the middle.\u00a0 Sprinkle with bacon bits.\u00a0\u00a0\u00a0 Serve immediately.\u00a0\u00a0 Serves 2<\/p>\n<h3>Options<\/h3>\n<ol>\n<li>Instead of using hard-boiled eggs, hollow out two \u201cnests\u201d in the sauteed beet greens while they are still in the pan.\u00a0 Crack an egg into each nest, reduce heat to low, cover and cook until egg sets.\u00a0 For this version, which is very nice for breakfast, you may prefer to nix the walnuts.<\/li>\n<li>For a savory dish, substitute Herbes de Provence (or Savory Spices\u2019 Cantanzaro Herbs) for the ginger. Substitute crumbled goat chevre for the eggs.<\/li>\n<li>Make this dish vegetarian by using vegetarian bacon, but add 1 Tbsp. safflower oil to saute the onion.\u00a0 The same goes if using turkey bacon instead of pork.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Want to make organic vegetables more affordable?
