{"id":1417,"date":"2012-07-27T20:32:32","date_gmt":"2012-07-27T20:32:32","guid":{"rendered":"http:\/\/cookhappylivehealthy.org\/blog\/?p=1417"},"modified":"2024-07-24T20:12:15","modified_gmt":"2024-07-24T20:12:15","slug":"recipe-quick-curry-skillet-makes-delicious-use-of-beet-greens","status":"publish","type":"post","link":"https:\/\/cookhappylivehealthy.org\/blog\/recipe-quick-curry-skillet-makes-delicious-use-of-beet-greens\/","title":{"rendered":"Recipe:  Quick Curry Skillet Makes Delicious Use of Beet Greens"},"content":{"rendered":"<h3>Need a Fast Dinner or Lunch?\u00a0 Make Creative Use of Your Refrigerator&#8217;s Treasures<\/h3>\n<p>I promise to stop talking about beets&#8211;but not yet.\u00a0 After our final class on beet relish last night at <a href=\"http:\/\/www.isabellefarm.com\/\" target=\"_blank\" rel=\"noopener\">Isabelle Farm<\/a>, I came home with another pile of beet greens&#8211;my third in as many weeks.\u00a0 And three times I experimented with <a title=\"Recipe:  Sauteed Beet Greens composed with Toasted Walnuts, Bacon Bits, &amp; Chopped\u00a0Egg\" href=\"http:\/\/cookhappylivehealthy.org\/blog\/2012\/07\/24\/recipe-sauteed-beet-greens-composed-with-toasted-walnuts-bacon-bits-chopped-egg\/\" target=\"_blank\" rel=\"noopener\">Saut\u00e9ed Beet Greens Composed with Bacon, Chopped Eggs and Walnuts<\/a>.\u00a0 So it was time for something new.\u00a0 I was scratching my head for new ideas until I remembered to do what I usually do for a case of mealtime boredom:\u00a0 Look at what&#8217;s hanging around in the frig.<\/p>\n<p>Turns out that we had a number of interesting <a href=\"http:\/\/cookhappylivehealthy.org\/blog\/2010\/08\/04\/bits-pieces-cooking-an-evening-with-eugenia-bone\/\" target=\"_blank\" rel=\"noopener\">bits and pieces<\/a> leftover from class last night:\u00a0 a chunk of ginger, a cooked hamburger, the deglazing juices from the hamburgers, the green tops from the onions. . . .\u00a0 No surprise that these items, which all came together for a nice dinner menu, were equally compatible in a single dish.\u00a0 We just needed something for flavor.<\/p>\n<figure style=\"width: 489px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/everydaygoodeating.org\/nkcalendar-register.html\"><img loading=\"lazy\" decoding=\"async\" title=\"Ingredients for Quick Curry Skillet\" src=\"http:\/\/i722.photobucket.com\/albums\/ww230\/mcolletterogers\/BeetGreens--LeftoverCurrywithSigns500.png\" alt=\"\" width=\"499\" height=\"195\" \/><\/a><figcaption class=\"wp-caption-text\">For a vegetarian version, use garbanzo beans instead of hamburger and vegetable broth instead of the de-glazing juices. For an alternative color option, use yellow squash which is very much in season now. Saute small pieces a couple minutes before adding the onion greens.<\/figcaption><\/figure>\n<p>Curry powder presented itself as a good compliment for beet greens.\u00a0 In class, we learned about how spice blends like curry powder are the busy cook&#8217;s solution for bland dishes.\u00a0 No mixing, matching or consternation, just add a teaspoon or two and you&#8217;ve instantly got a professionally seasoned dish!\u00a0 When it comes to spice blends, I&#8217;ve had great luck with the blends made by the folks at <a href=\"http:\/\/www.savoryspiceshop.com\/aboutus\/boulder.html\" target=\"_blank\" rel=\"noopener\">Savory Spice.<\/a>\u00a0 The medium curry blend in this dish was no exception, especially when bumped up with a little fresh or prepared ginger and garlic.<\/p>\n<p>So here&#8217;s how my odd assortment of leftover ingredients came together:<\/p>\n<ul>\n<li>Slice tops from 1 green onion (about 2 cups), saute in 1 Tbsp. safflower oil, then add<\/li>\n<li>2-3 tsp. minced garlic (to taste)<\/li>\n<li>2-3 tsp. freshly grated ginger (to taste)<\/li>\n<li>1-2 tsp.
