{"id":1446,"date":"2012-09-28T00:43:00","date_gmt":"2012-09-28T00:43:00","guid":{"rendered":"http:\/\/cookhappylivehealthy.org\/blog\/?p=1446"},"modified":"2012-09-28T00:43:00","modified_gmt":"2012-09-28T00:43:00","slug":"extravagance","status":"publish","type":"post","link":"https:\/\/cookhappylivehealthy.org\/blog\/extravagance\/","title":{"rendered":"Extravagance"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" title=\"Red Pepper\" src=\"http:\/\/i722.photobucket.com\/albums\/ww230\/mcolletterogers\/RedPepperCropped.jpg\" alt=\"Red Pepper\" width=\"469\" height=\"475\" \/><\/p>\n<p>Autumn is such an extravagant time.\u00a0 Take red peppers, which come into season in the fall.\u00a0 At any other time of year, organic red peppers can cost $3.50 a piece and should I buy one, it would be frugally parceled out into at least three dishes.<\/p>\n<p>In autumn, however, a gigantic organic pepper, as sweet as jam, costs only $1.66.\u00a0 My CSA gives us three or four each week.\u00a0 I will eat an entire pepper, much like an apple, hurrying to gulp down huge bites before winter comes and they all disappear.<\/p>\n<p>Part of me chides and demands a pound of guilt for engaging in such unabashed greed.\u00a0 Buy why feel guilty when there&#8217;s so much abundance?<\/p>\n<p>The word abundance brings up the term &#8220;abundance theory,&#8221; which is thrown about a lot these days.\u00a0 I always discounted it, as a veiled justification for accumulating more stuff.\u00a0 But over the last few months,\u00a0 I&#8217;ve come to see a more palatable side of abundance theory while watching my garden yield significant amounts of produce for the first time.<\/p>\n<p>Stop long enough to count and it&#8217;s clear to see that nature is wildly abundant.\u00a0 In May we put seeds in the ground the size of pin heads.\u00a0 Lo and behold, by September they&#8217;ve magically transformed into a cornucopia of carrots, tomatoes, chard, kale, eggplant, peppers and more!\u00a0 Maybe that&#8217;s what the abundance theory really refers to.<\/p>\n<p>To experience the abundance theory yourself, head to a Farmers&#8217; Market or farm stand, right away and buy the last of the warm weather crops.\u00a0 Then eat them with abandon!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Autumn is such an extravagant time.\u00a0 Take red peppers, which come into season in the fall.\u00a0 At any other time of year, organic red peppers can cost $3.50 a piece and should I buy one, it would be frugally parceled out into at least three dishes.
