{"id":1470,"date":"2012-10-04T21:16:03","date_gmt":"2012-10-04T21:16:03","guid":{"rendered":"http:\/\/cookhappylivehealthy.org\/blog\/?p=1470"},"modified":"2012-10-04T21:16:03","modified_gmt":"2012-10-04T21:16:03","slug":"vegetables-and-laundry-baskets","status":"publish","type":"post","link":"https:\/\/cookhappylivehealthy.org\/blog\/vegetables-and-laundry-baskets\/","title":{"rendered":"Vegetables and Laundry Baskets"},"content":{"rendered":"<p>It&#8217;s not surprising that we think of vegetables as inanimate objects.\u00a0 After all, we generally buy them in gigantic stores where, displayed in the next aisle over, might be anything from beauty products, pharmaceuticals and miscellaneous hardware items to winter gloves, engine oil and even laundry baskets.<\/p>\n<p>While it&#8217;s not hard to see a distinction between a green pepper and a snow shovel, it never dawned on me to give it much thought or attribute any significance to the obvious differences.\u00a0 Until I began researching best practices for vegetable storage.\u00a0 That&#8217;s when I learned that separating a vegetable from its mother plant might hasten the time when it becomes compost, but picking doesn&#8217;t kill it.\u00a0 Consequently, successful vegetable storage is all about creating optimal conditions for keeping vegetables alive as long as possible after being detached from life support.<\/p>\n<figure style=\"width: 249px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" title=\"Tuna and White Bean Salad\" src=\"http:\/\/i722.photobucket.com\/albums\/ww230\/mcolletterogers\/WhiteBeanTunaSaladAdjusted.jpg\" alt=\"Tuna and White Bean Salad\" width=\"259\" height=\"216\" \/><figcaption class=\"wp-caption-text\">Experiment with something other than a green salad for lunch, like this tuna and white bean salad that served as a vehicle for using up extra white beans cooked for a kale soup we made in our classes.
