{"id":1505,"date":"2012-10-30T16:49:38","date_gmt":"2012-10-30T16:49:38","guid":{"rendered":"http:\/\/cookhappylivehealthy.org\/blog\/?p=1505"},"modified":"2012-10-30T16:49:38","modified_gmt":"2012-10-30T16:49:38","slug":"quick-recipe-miso-chard-soup","status":"publish","type":"post","link":"https:\/\/cookhappylivehealthy.org\/blog\/quick-recipe-miso-chard-soup\/","title":{"rendered":"Quick Recipe:  Miso Chard Soup"},"content":{"rendered":"<p><em>Miso is a thick seasoning paste made from soybeans.\u00a0 It hails from Japan, where it has been eaten for centuries.\u00a0 To the modern kitchen it brings <\/em><em>flavor that&#8217;s super <\/em><em>fast but nutritious .\u00a0 Really, you don&#8217;t have to fool with any other seasonings.\u00a0 Just add a dollop of no-to-low calorie miso and you get amazing flavor.\u00a0<\/em><\/p>\n<p><em>I seem to forget about miso for long stretches.\u00a0 Happily, it lasts for practically ever in the frig, so it&#8217;s still good when I remember it again.\u00a0 This morning, its hearty, comforting flavor came to mind as I was casting about for a way to use up the chard rescued from my garden before last week&#8217;s storm.\u00a0 Watermelon radishes and last-of-the-season yellow pepper added color. \u00a0<\/em><\/p>\n<figure style=\"width: 301px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" title=\"Miso Chard Soup\" alt=\"Miso Chard Soup\" src=\"http:\/\/i722.photobucket.com\/albums\/ww230\/mcolletterogers\/MisoChardSoupAdjusted.jpg\" height=\"288\" width=\"311\" \/><figcaption class=\"wp-caption-text\">Know a few cooking basics and you&#8217;re set for easy, healthful soup making<\/figcaption><\/figure>\n<h3><span style=\"color:#008080;\">Miso Chard Soup<\/span><\/h3>\n<p>Saute in a neutrally flavored oil:<\/p>\n<ul>\n<li>1 onion, diced to 1\/2&#8243;<\/li>\n<li>1 watermelon radish, cut in 1\/4&#8243; matchsticks<\/li>\n<li>1 yellow pepper, diced to 1\/2&#8243; (last of the season; use frozen if not available fresh)<\/li>\n<\/ul>\n<p>Stir in and simmer 5-10 minutes<\/p>\n<ul>\n<li>6 cups chard<\/li>\n<li>1 qt. good broth<\/li>\n<\/ul>\n<p>Stir in and cook a couple more minutes:<\/p>\n<ul>\n<li>1 cup cooked millet<\/li>\n<li>1 box silken tofu, diced to 1\/2&#8243;<\/li>\n<\/ul>\n<p>Remove soup from heat and stir in:<\/p>\n<ul>\n<li>1\/4 cup red miso (more or less to taste), mixed with 1\/4 cup cold broth<\/li>\n<\/ul>\n<p><strong>NOTE<\/strong>:\u00a0 This recipe is written in simplified format, showing how easy it is to make nutritious meals if you know the building block basics, like:<\/p>\n<ul>\n<li>efficiently dicing vegetables<\/li>\n<li>what it means to saute them and how it can build lovely flavor<\/li>\n<li>all about different kinds of misos and how to use them without destroying their nutritional benefits<\/li>\n<li>seasonal radishes, what is millet and &#8220;good&#8221;
