{"id":2008,"date":"2014-04-28T22:03:22","date_gmt":"2014-04-28T22:03:22","guid":{"rendered":"http:\/\/cookhappylivehealthy.org\/blog\/?p=2008"},"modified":"2017-11-08T16:02:09","modified_gmt":"2017-11-08T16:02:09","slug":"recipe-white-fish-in-cilantro-broth-with-sweet-potatoes-and-broccoli","status":"publish","type":"post","link":"https:\/\/cookhappylivehealthy.org\/blog\/recipe-white-fish-in-cilantro-broth-with-sweet-potatoes-and-broccoli\/","title":{"rendered":"Recipe:  White Fish in Cilantro Broth with Sweet Potatoes and Broccoli"},"content":{"rendered":"<h3><span style=\"color:#008000;\">Simple, One-Dish Style Makes for Simple Dinner Times<\/span><\/h3>\n<figure style=\"width: 448px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/i722.photobucket.com\/albums\/ww230\/mcolletterogers\/WhiteFish-CilantroBroth-SweetPotatoes-Broccoli5.jpg\" alt=\"\" width=\"458\" height=\"344\" \/><figcaption class=\"wp-caption-text\">Broccoli florets and julienned sweet potatoes surround delicate white fish kept moist and tasty with the springy tang of a cilantro broth.<\/figcaption><\/figure>\n<p><strong>Step 1:\u00a0 Prepare Cilantro Broth\u00a0\u00a0<\/strong><\/p>\n<ul>\n<li>1 Tbsp. roughly chopped garlic (from about 3 cloves)<\/li>\n<li>1 Tbsp. jalapeno pepper, chopped roughly, more or less, to taste<\/li>\n<li>\u00bc\u00a0 cup freshly squeezed lime juice<\/li>\n<li>\u00bc tsp. salt, more or less to taste<\/li>\n<li>1 cup chicken or vegetable broth, low sodium (divided)<\/li>\n<li>2 cups roughly chopped cilantro, both stems and leaves<\/li>\n<\/ul>\n<p>In cup of immersion blender, combine garlic, jalapeno, lime juice and salt.\u00a0 Allow to sit for several minutes to meld flavors.\u00a0 Add half of broth and cilantro.\u00a0 Blend until fairly smooth but with a little texture, then add remaining broth and blend just enough to incorporate it.\u00a0 Reserve.<\/p>\n<figure style=\"width: 240px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/i722.photobucket.com\/albums\/ww230\/mcolletterogers\/WhiteFish-CilantroBroth-SweetPotatoes-Broccoli4.jpg\" alt=\"\" width=\"250\" height=\"286\" \/><figcaption class=\"wp-caption-text\">Even though this is a one-dish meal, two-pan cooking makes preparation faster&#8211;vegetables simmer-steam in one pan while the fish cooks in another.<\/figcaption><\/figure>\n<p><strong>Step 2:\u00a0 Simmer Steam Vegetables<\/strong><\/p>\n<ul>\n<li>1 cup chicken or vegetable broth, low sodium (divided)<\/li>\n<li>2 cups broccoli florets, cut about \u00bd to 3\/4\u201d in size<\/li>\n<li>1 lrg. Garnet or Jewel yam, julienned to about 1\/8\u201d, then cut into roughly 2\u201d lengths<\/li>\n<\/ul>\n<p>Combine broth and broccoli florets in a large frying pan with a lid.\u00a0 Cover, bring to a boil, then reduce heat t o low and simmer just 3-5 minutes, until broccoli is halfway done.<br \/>\nStir in yam strips and continue simmering until both broccoli and yams are almost done to taste, about 3-5 more minutes.<\/p>\n<p><strong>Step 3:\u00a0 Pan Fry White Fish\u00a0<\/strong><\/p>\n<ul>\n<li>\u00bd to \u00be lb. cod, talapia or other mild white fish filets either fresh or frozen and thawed, cut into 2-3\u201d cutlets<\/li>\n<li>Sea salt and freshly ground pepper, to taste<\/li>\n<li>1 Tbsp. olive oil, to taste<\/li>\n<\/ul>\n<p>While vegetables cook, warm oil over medium heat in a medium-sized, heavy bottomed saute pan.\u00a0 Gently squeeze or pat cutlets dry, then season with salt and pepper.\u00a0 When a corner of fish sizzles gently when touched in warming oil, use a spatula to spread oil evenly over bottom of pan, then lay cutlets in warmed oil in a single layer so they do not touch each other.\u00a0 Set timer and cook for 3 minutes and flip over.\u00a0 Reduce heat to medium low and cook another 1 minute, then remove immediately to a plate.<\/p>\n<p><strong>Step 4:\u00a0 Combine and Serve<\/strong><\/p>\n<p>As soon as vegetables are almost done, stir in reserved sauce, then push vegetables to sides of pan and lay partially cooked cutlets in center.\u00a0 Continue simmering, covered, just 1-2 more minutes, until fish is done.\u00a0 Taste and add more salt, pepper, lime or jalapenos,\u00a0 to taste.\u00a0 Serve immediately, placing two or three cutlets in center of wide soup bowl surrounded by half of the vegetables.\u00a0 Spoon broth over the top.<\/p>\n<p>Optional:\u00a0 Serve alongside a little brown rice to soak up the broth deliciously<\/p>\n<h3>NOTES:\u00a0 <a title=\"Background Info for White Fish in Cilantro Broth\" href=\"http:\/\/cookhappylivehealthy.org\/blog\/2014\/04\/28\/the-problem-with-recipes\/\" target=\"_blank\">See the next post for background information on preparing this recipe.<\/a><\/h3>\n","protected":false},"excerpt":{"rendered":"<p>One-dish meals are the best:  Fewer moving parts to keep track of and everything gets done together.
