Not just extra servings of a dish, but also all the vegetables, seasonings, meat, rice, and other ingredients left over from making the dish.\u00a0 Making <a title=\"Recipe:  Saut\u00e9ed Beet and Snap Pea Salad with Steak Strips and Cumin Dressing\" href=\"http:\/\/cookhappylivehealthy.org\/blog\/2014\/07\/06\/recipe-sauteed-beet-and-snap-pea-salad-with-steak-strips-and-cumin-dressing\/\">the Sauteed Beet and Snap Pea Salad in the next post<\/a>, for instance, leaves behind nearly a dozen foods:<\/p>\n<h3><span style=\"text-decoration:underline;color:#ff6600;\">The Leftovers List<\/span><\/h3>\n<ul>\n<li>\n<figure style=\"width: 290px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/i722.photobucket.com\/albums\/ww230\/mcolletterogers\/0f54fea6-0a04-4fa3-b6c1-032579e6da9a.jpg\" alt=\"Sauteed Beets\" width=\"300\" height=\"238\" \/><figcaption class=\"wp-caption-text\">Sometimes beets are only sold in bunches.\u00a0 If you don&#8217;t need that many for a dish, saute the leftovers for a fabulous salad topper&#8211;or mid-afternoon snack.<\/figcaption><\/figure>\n<p>One serving of the finished salad<\/li>\n<li>Steak strips<\/li>\n<li>Couple handfuls of sugar snap peas<\/li>\n<li>2-3 beets from a bunch<\/li>\n<li>Beet greens<\/li>\n<li>Beet green stems<\/li>\n<li>Garlic<\/li>\n<li>Cumin dressing<\/li>\n<li>Cilantro<\/li>\n<li>Limes<\/li>\n<li>Rice or quinoa<\/li>\n<\/ul>\n<p><span style=\"text-decoration:underline;\"><span style=\"color:#ff6600;text-decoration:underline;\"><strong>Problem or Possibility?\u00a0<\/strong><\/span><\/span> All those leftover items in the frig could lead to some anxiety.\u00a0 &#8220;What am I going to do with all of them?\u00a0 They&#8217;re taking over my frig!&#8221;\u00a0 Or those leftovers might become sparks of inspiration for a whole week&#8217;s worth of meals&#8211;plus at least one lunch:<\/p>\n<p><span style=\"text-decoration:underline;\"><strong><span style=\"color:#ff6600;text-decoration:underline;\">Lunch the Next Day<\/span><\/strong><\/span><\/p>\n<ul>\n<li>Leftover Saut\u00e9ed Beet and Snap Pea Salad with Goat Chevre and Toasted Walnuts<\/li>\n<li>Whole Wheat Pita Wedges<\/li>\n<\/ul>\n<p>Make creative use of leftover salad by serving with a different side and new toppings (substitute another cheese or nut to suit your tastes)<\/p>\n<p><span style=\"text-decoration:underline;\"><strong><span style=\"color:#ff6600;text-decoration:underline;\">Night 2<\/span><\/strong><\/span><\/p>\n<ul>\n<li>Sweet Potatoes with Cumin Dressing<\/li>\n<li>Salmon with Lime and Cilantro<\/li>\n<li>Garlic Saut\u00e9ed Beet Greens<\/li>\n<\/ul>\n<p>If it&#8217;s too hot for sweet potato fries, microwave then grill wedges and toss with dressing. Grill the salmon, too, and top with lime juice and cilantro. Try sprinkling apple cider vinegar over the saut\u00e9ed beet greens.<\/p>\n<p><span style=\"text-decoration:underline;\"><span style=\"color:#ff6600;\"><strong>Night 3<\/strong><\/span><\/span><\/p>\n<ul>\n<li>Early Summer Meal Salad:\u00a0 Lettuce, Saut\u00e9ed Beets and Summer Turnips, Spicy Pumpkin Seeds, Garbanzo or White Beans, Cherries or Apricots\u2014plus anything else you have on hand!<\/li>\n<li>Lemon Tarragon Vinaigrette (or store-bought dressing of choice, e.g., Drew&#8217;s Sesame Orange or Braggs Vinaigrette)<\/li>\n<li>Whole Wheat Pita Wedges<\/li>\n<\/ul>\n<p>For an interesting addition to a salad, cut and saute the rest of the beets, along with some summer turnips, as directed in the Beet and Snap Pea Salad recipe .<\/p>\n<p><span style=\"text-decoration:underline;\"><span style=\"color:#ff6600;\"><strong>Night 4<\/strong><\/span><\/span><\/p>\n<ul>\n<li>\n<figure style=\"width: 313px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" style=\"border:1px solid #000000;\" src=\"http:\/\/i722.photobucket.com\/albums\/ww230\/mcolletterogers\/SnapPeaBlackBeanStirFry-1.jpg\" alt=\"Snap Pea Stir-Fry\" width=\"323\" height=\"243\" \/><figcaption class=\"wp-caption-text\">Leftover snap peas make a great snack, or make a quick stir-fry with them. Learn the 10 Steps to Super Stir Fries in one of our classes<\/figcaption><\/figure>\n<p>Stir Fry with Snap Peas, Onions, Summer Turnips, Steak Strips and Carrots<\/li>\n<li>Leftover rice or quinoa<\/li>\n<\/ul>\n<p>Use up leftover summer turnips from Night 3&#8217;s salad.\u00a0 Cut them and the carrots into 1\/4&#8243; matchsticks. Flash fry steak strips in a separate pan for best results. Combine everything and top simply with soy sauce and San-J Szechuan sauce for a little heat. Serve with rice or quinoa warmed in the microwave.<\/p>\n<p><span style=\"text-decoration:underline;\"><span style=\"color:#ff6600;\"><strong>Night 5\u2014Super Easy Meal<\/strong><\/span><\/span><\/p>\n<ul>\n<li>Readymade Lentil Soup with Beet Stems<\/li>\n<li>Whole Grain Toasts with Chevre and Roasted Peppers<\/li>\n<li>Optional Chicken\u2014grilled, rotisserie, deli or saut\u00e9ed<\/li>\n<\/ul>\n<p>Relax at the end of the week. Simply slice leftover beet stems very thinly and stir into Amy&#8217;s or another favorite lentil soup.\u00a0 Simmer 5 to10 minutes until tender to taste. Meanwhile, cut whole grain bread into quarters and toast or grill; top with chevre and diced roasted peppers.
