{"id":208,"date":"2008-11-26T04:03:08","date_gmt":"2008-11-26T04:03:08","guid":{"rendered":"http:\/\/cookhappylivehealthy.org\/blog\/?p=208"},"modified":"2008-11-26T04:03:08","modified_gmt":"2008-11-26T04:03:08","slug":"kitchen-coach-on-tv-whips-together-an-appetizer-with-a-difference","status":"publish","type":"post","link":"https:\/\/cookhappylivehealthy.org\/blog\/kitchen-coach-on-tv-whips-together-an-appetizer-with-a-difference\/","title":{"rendered":"Kitchen Coach on TV&#8211;Whips Together an Appetizer with a Difference"},"content":{"rendered":"<p>Kitchen Coach Mary Collette is doing a Holiday Cooking series for Fox 31 in Denver.\u00a0 Her first appearance was last Friday, November 21, when she and host Ken Clark made an appetizer tray featuring:<\/p>\n<ul>\n<li> Rosemary Yam Butter<\/li>\n<li>Sauteed (or Roasted) Red Pepper Strips<\/li>\n<li>Whole Grain Baguette<\/li>\n<\/ul>\n<p>It was a beautiful presentation&#8211;and it tasted great, too!\u00a0 And it was really easy.\u00a0 The only addition I would have made:\u00a0 some gourmet olives on the tray for a little contrast.\u00a0 Here&#8217;s the recipe:<\/p>\n<h3>Rosemary Yam Butter Appetizer Tray<\/h3>\n<ul>\n<li>2 medium yams, baked, skinned then cut roughly into 1-2\u201d pieces (enough to make 2 cups)<\/li>\n<li>3 Tbsp. good quality olive oil (or more, to taste)<\/li>\n<li>Sea salt and freshly ground pepper, to taste<\/li>\n<\/ul>\n<p>Place yam pieces in bowl of food processor or cup of immersion blender and process until smooth.\u00a0\u00a0With processor or blender running, add oil in a slow stream.\u00a0 Process a minute or two, until yam butter becomes creamy and fluffy.\u00a0 Add salt and pepper to taste, then process briefly again.<\/p>\n<ul>\n<li>1 tsp. fresh minced rosemary<\/li>\n<\/ul>\n<p>Add to yam butter and stir thoroughly to combine.\u00a0 Taste and add more rosemary (in very small amounts) or more salt and pepper, to taste.<\/p>\n<ul>\n<li>1 lrg red pepper, sliced lengthwise into \u00bd\u201d strips<\/li>\n<li>1 Tbsp. olive oil<\/li>\n<\/ul>\n<p>Heat oil in large saute pan until hot but not smoking.\u00a0 Add pepper strips and saute over medium<br \/>\nhigh heat for just 3-4 minutes until slightly browned and wilted.<\/p>\n<ul>\n<li>1 12\u201d whole grain baguette, sliced \u00bc\u201d thick<\/li>\n<li>1-2 cups gourmet olives, pitted<\/li>\n<\/ul>\n<p>To serve appetizer:\u00a0 Mound yam butter in center of serving platter.\u00a0 Surround with a ring of sauteed peppers, then baguette slices.\u00a0 Finish with olives around edge of plate.\u00a0 Use butter knives and small appetizer forks to spread butter and serve peppers, respectively.\u00a0 Spread yam butter on bread and top with peppers, if desired.\u00a0 Best when yam butter is at room temperature.<\/p>\n<p>Serves 12 as an appetizer<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Kitchen Coach Mary Collette is doing a Holiday Cooking series for Fox 31 in Denver.
