{"id":2444,"date":"2017-01-17T03:17:25","date_gmt":"2017-01-17T03:17:25","guid":{"rendered":"http:\/\/cookhappylivehealthy.org\/blog\/?p=2444"},"modified":"2017-02-22T15:22:54","modified_gmt":"2017-02-22T15:22:54","slug":"recipe-healthy-chocolate-almond-brownies-gluten-free","status":"publish","type":"post","link":"https:\/\/cookhappylivehealthy.org\/blog\/recipe-healthy-chocolate-almond-brownies-gluten-free\/","title":{"rendered":"Recipe:  Healthy Chocolate Almond Brownies (Gluten Free)"},"content":{"rendered":"<p><em>Note:\u00a0 This recipe is part of <a href=\"http:\/\/cookhappylivehealthy.org\/blog\/2016\/10\/20\/why-your-diet-resolutions-never-happen\/\" target=\"_blank\">a series on making your good eating resolutions come true<\/a>.\u00a0<\/em><\/p>\n<p>A few months ago, I resolved to make my own almond milk so I didn\u2019t have to drink the additives in store-bought almond milk.\u00a0 While you can learn a lot about how to make almond milk from this series, that\u2019s only a small part of the story.<\/p>\n<p>The bigger part\u2013the \u201cmoral of the story\u201d you might say\u2013is to show how much territory lies between making a resolution and seeing it happen, day after day.\u00a0 If you feel frustrated by resolutions that never come true, find out <a href=\"http:\/\/cookhappylivehealthy.org\/blog\/2016\/10\/28\/diet-hopes-day-1-getting-out-of-the-starting-gate-do-i-really-want-to-bother\/\" target=\"_blank\">what barriers might be hanging you up<\/a> without your knowing it\u2013and then how to get around them.<\/p>\n<p>A barrier I discovered is that milk making produces a sizeable pile of leftover almond meal.\u00a0 I really don\u2019t like to waste food, so after a couple batches, the almond meal piling up in the frig became a barrier for me.\u00a0 My solution was to experiment with recipes to use it up, like this recipe for Healthy Chocolate Almond Brownies.\u00a0 Of course if you don&#8217;t have leftover almond meal, packaged almond flour can be substituted.\u00a0 See the Notes for directions.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-2435\" src=\"http:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2017\/01\/ChocAlmondBrownies-GF-1-300x300.jpg\" alt=\"ChocAlmondBrownies--GF (1)\" width=\"601\" height=\"601\" srcset=\"https:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2017\/01\/ChocAlmondBrownies-GF-1-300x300.jpg 300w, https:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2017\/01\/ChocAlmondBrownies-GF-1-150x150.jpg 150w, https:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2017\/01\/ChocAlmondBrownies-GF-1-768x768.jpg 768w, https:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2017\/01\/ChocAlmondBrownies-GF-1-1024x1024.jpg 1024w\" sizes=\"auto, (max-width: 601px) 100vw, 601px\" \/><\/p>\n<p>Meghan Telpner&#8217;s <a href=\"http:\/\/www.meghantelpner.com\/blog\/chocolate-butternut-squash-my-new-lover\/?utm_content=buffer20fcc&amp;utm_medium=social&amp;utm_source=facebook.com&amp;utm_campaign=buffer\" target=\"_blank\">Butternut Squash Ooo-eee Goo-eee Brownie<\/a> recipe was the inspiration for this almond meal creation.\u00a0 <a href=\"http:\/\/www.meghantelpner.com\/\" target=\"_blank\">Meghan is a nutritionist<\/a> who was diagnosed with Crohn&#8217;s Disease, a supposedly incurable disease that she cured in a month!\u00a0 She has gone on to create a small empire around healthy eating, but still finds time to share recipes, like this one that was a desperate last ditch effort to use up the butternut squash in her pantry.\u00a0 My almond meal substituted well for most of the rice flour called for&#8211;and I was able to reduce the sugar by using stevia and a bit less cocoa.\u00a0 In case you think &#8220;Healthy&#8221; ruins the appeal of &#8220;Brownies,&#8221; withhold judgment until you&#8217;ve tried this recipe.<\/p>\n<h3><span style=\"color: #d68102;\">Healthy Chocolate Almond Brownies<\/span><\/h3>\n<p>Preheat oven to 350 (F).\u00a0 Coat bottom and sides of a 8\u201d round cake pan with coconut oil and sprinkle all surfaces with brown rice flour.<\/p>\n<ul>\n<li>2 oz. unsweetened baking chocolate bar<\/li>\n<li>1 Tbsp. coconut oil<\/li>\n<li>1\/3 cup raw honey **<\/li>\n<\/ul>\n<p>Combine chocolate, oil and honey in a small saucepan over medium-low heat and warm until melted, stirring often to prevent burning.<\/p>\n<ul>\n<li>1 cup baked butternut squash (either peeled or scooped from skin) **<\/li>\n<li>\u00bc cup brown rice flour<\/li>\n<li>\u00bd cup almond meal **<\/li>\n<li>3 Tbsp. cocoa powder<\/li>\n<li>1\/16 tsp. pure stevia powder **<\/li>\n<li>\u00be tsp. baking powder<\/li>\n<li>1 tsp. vanilla extract<\/li>\n<li>1 tsp. almond extract<\/li>\n<li>\u00bd tsp. salt<\/li>\n<\/ul>\n<p>While chocolate mixture is melting, combine above ingredients in food processor and pulse a few times to combine.<\/p>\n<p>Add the melted chocolate-oil-honey mixture and pulse a few more times until batter is well combined, scraping down sides of bowl between pulses.\u00a0 Using a rubber spatula, scrape batter into prepared pan and smooth across evenly.<br \/>\n.<\/p>\n<ul>\n<li>\u00bc \u0003to \u00bd cup walnut pieces, optional<\/li>\n<\/ul>\n<p>Sprinkle walnuts over top of batter, if using.\u00a0 Bake 25 to 35 minutes until a toothpick inserted in the middle comes out clean.\u00a0 Place pan on a wire rack to cool before eating.\u00a0 (Brownies taste best when thoroughly cooled or even the next day&#8211;if you can wait that long!)<\/p>\n<p><strong>**Notes<\/strong><\/p>\n<p><strong>Baking Butternut Squash<\/strong>\u00a0 Don\u2019t wait to bake the squash until you\u2019re dying for some sweet chocolate brownies.\u00a0 The idea behind this recipe is to make things easy by using up <strong>leftover<\/strong> squash.\u00a0 So think ahead:\u00a0 Make squash one day for dinner then you\u2019re set to quickly make this recipe a day or two later.<\/p>\n<p><strong>Baking Squash<\/strong>\u00a0 Baking or roasting the squash will enhance and concentrate its flavor and won\u2019t leave it as soggy as will steaming or boiling.\u00a0 Peel, seed and then cut into large sections, which allows the squash to brown slightly but stay soft enough to puree smoothly for the brownies.\u00a0 Coat pieces with canola oil, spread across a cookie sheet, sprinkle with salt and bake at 400 to 425 (F), until tender when stuck with a fork.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-2445\" src=\"http:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2017\/01\/Roasted-butternut-1-300x300.jpg\" alt=\"Roasted butternut (1)\" width=\"394\" height=\"394\" srcset=\"https:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2017\/01\/Roasted-butternut-1-300x300.jpg 300w, https:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2017\/01\/Roasted-butternut-1-150x150.jpg 150w, https:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2017\/01\/Roasted-butternut-1-768x768.jpg 768w, https:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2017\/01\/Roasted-butternut-1-1024x1024.jpg 1024w\" sizes=\"auto, (max-width: 394px) 100vw, 394px\" \/><\/p>\n<p><strong>Squash Options\u00a0<\/strong> Instead of butternut, we used a combination of dumpling and acorn squash leftover from Thanksgiving with good results.<\/p>\n<p><strong>No Almond Meal?<\/strong> Just substitute almond flour or brown rice flour.<\/p>\n<p><strong>Stevia<\/strong> is a no-carb, no-calorie sweetener made from the leaves of a plant found in Asia and South America.\u00a0 By using a small amount you can reduce the amount of honey required.\u00a0 However, if your stevia brand includes ingredients other than stevia, a larger amount may be required to sweeten the brownies to the same extent as the pure variety called for in this recipe.<\/p>\n<p><strong>Raw Honey<\/strong> is unfiltered and unpasteurized.\u00a0 Most of the honey consumed today is processed by heating and filtering, which destroys many of the naturally occurring vitamins, enzymes, phytonutrients and other nutritional elements.\u00a0 This is why the recipe calls for raw, but if you can&#8217;t find it, processed honey can be substituted.<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Note:\u00a0 This recipe is part of a series on making your good eating resolutions come true.\u00a0 A few months ago, I resolved to make my own almond milk so I didn\u2019t have to drink the additives in store-bought almond milk.\u00a0 While you can learn a lot about how to make almond milk from this series, &#8230;
