{"id":2478,"date":"2017-02-22T01:08:59","date_gmt":"2017-02-22T01:08:59","guid":{"rendered":"http:\/\/cookhappylivehealthy.org\/blog\/?p=2478"},"modified":"2017-02-22T15:21:11","modified_gmt":"2017-02-22T15:21:11","slug":"recipe-chocolate-almond-macaroons","status":"publish","type":"post","link":"https:\/\/cookhappylivehealthy.org\/blog\/recipe-chocolate-almond-macaroons\/","title":{"rendered":"Recipe:  Chocolate Almond Macaroons"},"content":{"rendered":"<p><em>Note:\u00a0 This recipe is part of <a href=\"http:\/\/cookhappylivehealthy.org\/blog\/2016\/10\/20\/why-your-diet-resolutions-never-happen\/\" target=\"_blank\">a series on making your good eating resolutions come true<\/a>.\u00a0 <\/em><\/p>\n<p>A couple months ago, I resolved to make my own almond milk so I didn\u2019t have to drink the additives in store-bought almond milk.\u00a0 While you can learn a lot about how to make almond milk from this series, that\u2019s only a small part of the story.<\/p>\n<p>The bigger part\u2013the \u201cmoral of the story\u201d you might say\u2013is to show how much territory lies between making a resolution and seeing it happen, day after day.\u00a0 If you feel frustrated by resolutions that never come true, find out <a href=\"http:\/\/cookhappylivehealthy.org\/blog\/2016\/10\/28\/diet-hopes-day-1-getting-out-of-the-starting-gate-do-i-really-want-to-bother\/\" target=\"_blank\">what barriers might be hanging you up<\/a> without your knowing it\u2013and then how to get around them.<\/p>\n<p>A barrier I discovered is that milk making produces a sizeable pile of leftover almond meal.\u00a0 I really don\u2019t like to waste food, so after a couple batches, the almond meal piling up in the frig became a barrier for me.\u00a0 My solution was to experiment with recipes to use it up, like this recipe for Chocolate Almond Macaroons.\u00a0 Of course if you don&#8217;t have leftover almond meal, packaged almond flour can be substituted.\u00a0 See the Notes for directions.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-2436 aligncenter\" src=\"http:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2017\/01\/Chocolate-Almond-Macaroons-Cropped-300x226.jpg\" alt=\"\" width=\"492\" height=\"371\" srcset=\"https:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2017\/01\/Chocolate-Almond-Macaroons-Cropped-300x226.jpg 300w, https:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2017\/01\/Chocolate-Almond-Macaroons-Cropped-768x579.jpg 768w, https:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2017\/01\/Chocolate-Almond-Macaroons-Cropped-1024x771.jpg 1024w\" sizes=\"auto, (max-width: 492px) 100vw, 492px\" \/><\/p>\n<h3><span style=\"color: #993300;\">Chocolate Almond Macaroons<\/span><\/h3>\n<p><strong>Makes: 8 Macaroons<\/strong><\/p>\n<p>Preheat oven to 325 (F)<\/p>\n<ul>\n<li>1 egg (separated)<\/li>\n<li>1 egg white<\/li>\n<\/ul>\n<p>In a medium sized mixing bowl, using a whisk or large fork, beat egg whites until frothy.<\/p>\n<ul>\n<li>1 cup finely shredded, unsweetened coconut<\/li>\n<li>\u00be cup leftover almond meal<\/li>\n<li>2 Tbsp. cocoa powder<\/li>\n<li>4 Tbsp. raw honey or pure maple syrup<\/li>\n<li>1 tsp almond extract<\/li>\n<li>Pinch salt<\/li>\n<\/ul>\n<p>To egg whites, add coconut, almond meal, cocoa powder, honey or maple syrup, almond extract and salt, along with egg yolk from separated egg. Stir gently to combine.\u00a0 (Note: if using honey that is hard, melt first in a small glass bowl for just 10 to 15 seconds.)<\/p>\n<ul>\n<li>1\/2 tsp. coconut oil (or butter)<\/li>\n<\/ul>\n<p>Coat a 9\u201d x 9\u201d baking pan or large tart dish with coconut oil (or butter). Drop batter by heaping tablespoonfuls onto pan to make 8 macaroons (about 2 Tbsp. each) .<\/p>\n<p>Bake 15 to 18 minutes, until outsides become slightly hardened and egg whites are cooked through.<\/p>\n<h3><span style=\"color: #993300;\">Notes<\/span><\/h3>\n<p><strong>Tasty Addition<\/strong>\u00a0 Dried cranberries or cherries would be a good addition.<\/p>\n<p><strong>No Leftover Almond Meal?<\/strong>\u00a0 This recipe is a great way to use up the almond meal left over from making almond milk.\u00a0 If you don\u2019t have any, though, just substitute \u00bd cup more coconut and \u00bc cup almond or hazelnut flour from the grocery store.<\/p>\n<p><strong>Lower-Sugar Option<\/strong>\u00a0 Reduce the honey or maple syrup to 2 Tbsp. and add 1\/16 tsp. pure stevia.\u00a0 Stevia is a no-carb, no-calorie sweetener made from the leaves of a plant found in Asia and South America.\u00a0 By using a small amount you can reduce the amount of honey required.\u00a0 However, if your stevia brand includes ingredients other than stevia, a larger amount may be required to sweeten the macaroons to the same extent as the pure variety called for in this recipe.<\/p>\n<p><strong>Raw Honey<\/strong> is unfiltered and unpasteurized.\u00a0 Most of the honey consumed today is processed by heating and filtering, which destroys many of the naturally occurring vitamins, enzymes, phytonutrients and other nutritional elements. This is why the recipe calls for raw, but if you can&#8217;t find it, processed honey can be substituted.<\/p>\n<p><strong>Almond Extract<\/strong> can be replaced with vanilla.
