{"id":282,"date":"2008-12-15T13:32:53","date_gmt":"2008-12-15T13:32:53","guid":{"rendered":"http:\/\/cookhappylivehealthy.org\/blog\/?p=282"},"modified":"2017-11-08T16:07:25","modified_gmt":"2017-11-08T16:07:25","slug":"how-to-make-great-mashed-potatoes","status":"publish","type":"post","link":"https:\/\/cookhappylivehealthy.org\/blog\/how-to-make-great-mashed-potatoes\/","title":{"rendered":"How to Make Great Mashed Potatoes"},"content":{"rendered":"<p><!--[if gte mso 9]&gt;  Normal 0       MicrosoftInternetExplorer4  &lt;![endif]--><!--[if !mso]&gt;--><span style=\"font-size:10pt;font-family:Arial;color:black;\">In years past, I never gave potato mashing the attention it deserved.<span> <\/span>I just threw in a little butter and milk, mashed roughly with a hand masher and took them to the table.<span> <\/span>This year, I put a little time into experimenting and investigating and found some tricks that easily elevated the mashed potato into a something quite special.<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin-top:6pt;text-align:justify;\"><span style=\"font-size:10pt;font-family:Arial;color:black;\">Cooking technique was probably the most important discovery.<span> <\/span>Typically, potatoes are boiled in salted water for mashed potatoes, which is fine if you don\u2019t use too much water, which tends to \u201cleach out\u201d the flavor.<span> <\/span>Being moderate with the water, however, makes it easy to burn the potatoes because the water quickly evaporates or gets soaked up by the potatoes&#8211;and there is no worse smell, taste or mess than burned potatoes. <\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin-top:6pt;text-align:justify;\"><span style=\"font-size:10pt;font-family:Arial;color:black;\">Steaming retains the flavor, but it\u2019s also difficult to get the potatoes uniformly soft, especially without scorching the pot.<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin-top:6pt;text-align:justify;\"><span style=\"font-size:10pt;font-family:Arial;color:black;\">This recipe uses a slow cooker to avoid these difficulties.<span> <\/span>The potatoes get soft enough and stay moist enough to make great mashed potatoes, without losing any flavor or running the risk of burning.<span> <\/span>Plus, you can keep them perfectly warm until just when you\u2019re ready to mash. <\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin-top:3pt;text-align:justify;\"><span style=\"font-size:10pt;font-family:Arial;color:black;\">The technique is simple:<span> <\/span>Scrub potatoes and either dry with a clean dish towel or allow to air dry.<span> <\/span>Place in a 3.5 or 4 qt. oval slow cooker. Cover cooker and cook on high heat, 5-7 hours, until potatoes are very tender (clear to the middle) when stuck with a fork.<span> <\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin-top:3pt;text-align:justify;\"><span style=\"font-size:10pt;font-family:Arial;color:black;\">When potatoes are done, remove from slow cooker using a large turning fork.<span> <\/span>Wipe inside of slow cooker with a clean, damp rag, then butter liner.<span> <\/span>Use a paring knife to cut potatoes into 1-2\u201d cubes and return to slow cooker, then mash as directed in recipe.<span> <\/span><span> <\/span><span> <\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin-top:6pt;text-align:justify;\"><span style=\"font-size:10pt;font-family:Arial;color:black;\">What if you forget to put the potatoes on in the morning?<span> <\/span>The following recipe shares a microwave alternative that is just as good, but a little more time consuming.<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin-top:6pt;text-align:justify;\"><span style=\"font-size:10pt;font-family:Arial;color:black;\">P.S. Also note that there&#8217;s nothing unhealthy about these mashed potatoes.\u00a0 The humble potato often gets a bad rap, but that&#8217;s usually because it&#8217;s combined with silly amounts of butter and cream.\u00a0 Here, we&#8217;re using olive oil in a moderate amount (some is used just for roasting the garlic), we using milk instead of cream and we&#8217;re leaving the skins on, where a good portion of the vitamins and minerals reside.\u00a0 Just don&#8217;t eat the whole batch yourself!<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin-top:6pt;text-align:justify;\">\n<p class=\"MsoNormal\"><span style=\"font-size:10pt;font-family:Arial;\"> <\/span><\/p>\n<p class=\"MsoNormal\"><strong><span style=\"font-size:10pt;font-family:Arial;\">Roasted Garlic Mashed Potatoes<\/span><\/strong><\/p>\n<ul>\n<li>1 head garlic, roasted (to make about 2 Tbsp. roasted garlic paste, more or less to taste)<\/li>\n<li>3 Tbsp. olive oil, divided<\/li>\n<li>1\/3 to \u00bd cup milk or plain soy milk<\/li>\n<\/ul>\n<p class=\"MsoNormal\" style=\"margin-top:6pt;text-align:justify;\"><em><span style=\"font-size:10pt;font-family:Arial;color:black;\">The night or morning before:<span> <\/span><\/span><\/em><span style=\"font-size:10pt;font-family:Arial;color:black;\">Preheat the oven to 350 (F).<span> <\/span>Rub a head of garlic with about \u00bd Tbsp. of olive oil.<span> <\/span>Place inside a garlic roaster or small glass baking dish with a lid.<span> <\/span>Cover and bake about 45-60 minutes, until garlic head is soft when squeezed from the sides.<span> <\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin-top:3pt;text-align:justify;\"><span style=\"font-size:10pt;font-family:Arial;color:black;\">To remove the pulp:<span> <\/span>Once garlic has cooled slightly slice off root end of garlic head with a serrated knife, being sure to slice across every clove.<span> <\/span>Squeeze garlic from skins.<span> <\/span>Alternatively, if garlic has cooled completely, the roasted cloves might just pop out whole once the root end of the head is sliced off.<span> <\/span>Place roasted garlic in cup of immersion blender. <\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin-top:3pt;text-align:justify;\"><span style=\"font-size:10pt;font-family:Arial;color:black;\">Add remaining olive oil and 1\/3 cup milk to garlic and puree with blender.<span> <\/span>Reserve.<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:10pt;font-family:Arial;\"> <\/span><\/p>\n<ul>\n<li>2 lbs. Yukon gold potatoes (about 6 medium potatoes)<\/li>\n<li>Sea salt and freshly ground pepper, to taste<\/li>\n<\/ul>\n<p class=\"MsoNormal\" style=\"margin-top:3pt;text-align:justify;\"><span style=\"font-size:10pt;font-family:Arial;color:black;\">Cut unpeeled potatoes into roughly 1-2\u201d cubes, place in casserole dish, drizzle with about 1 Tbsp. olive oil and toss with hands to coat.<span> <\/span>Sprinkle with salt and pepper.<span> <\/span>Cover dish and microwave in 4-5 minute intervals, stirring after each interval, until potatoes are uniformly tender.<span> <\/span>It may take as long as 20-30 minutes, depending on your microwave\u2019s power level.<span> <\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin-top:3pt;text-align:justify;\"><span style=\"font-size:10pt;font-family:Arial;color:black;\">Once potatoes are cooked, transfer to a deep, medium-sized bowl.<span> <\/span>Mash with a potato masher until fairly smooth.<span> <\/span>Pour in milk mixture, sprinkle in salt and pepper and mash another minute or so to combine thoroughly.<span> <\/span>Taste and adjust seasonings, if desired.<span> <\/span>Add a little more milk if potatoes are too thick. <\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin-top:3pt;text-align:justify;\"><span style=\"font-size:10pt;font-family:Arial;color:black;\">If potatoes are too lumpy, smooth with an immersion blender (but never a food processor), being careful to use it very briefly so potatoes don\u2019t become gluey.<span> <\/span>Just go up and down once, through each section of potatoes.<span> <\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin-top:3pt;text-align:justify;\"><span style=\"font-size:10pt;font-family:Arial;color:black;\">For best results, serve immediately.<span> Enjoy! <\/span><\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:10pt;font-family:Arial;\"> <\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>In years past, I never gave potato mashing the attention it deserved.
