{"id":4078,"date":"2020-06-26T22:32:16","date_gmt":"2020-06-26T22:32:16","guid":{"rendered":"http:\/\/cookhappylivehealthy.org\/blog\/?p=4078"},"modified":"2020-10-30T16:16:52","modified_gmt":"2020-10-30T16:16:52","slug":"recipe-tahini-kale-and-tempeh-skillet","status":"publish","type":"post","link":"https:\/\/cookhappylivehealthy.org\/blog\/recipe-tahini-kale-and-tempeh-skillet\/","title":{"rendered":"Recipe:  Tahini Kale and Tempeh Skillet"},"content":{"rendered":"<p><em>The perfect go-to recipe:\u00a0 a one-dish meal made with convenient ingredients so it&#8217;s both flavorful and fast.\u00a0 Perfect for busy and hectic nights, <a href=\"http:\/\/cookhappylivehealthy.org\/blog\/help-theres-nothing-in-the-frig-to-eat\/\" target=\"_blank\" rel=\"noopener noreferrer\">including post-vacation meal crises.<\/a><br \/>\n<\/em><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #4a750d;\"><strong>Step 1:\u00a0 Simmer Tempeh and Kale<\/strong><\/span><\/p>\n<ul>\n<li>1 cup water<\/li>\n<li>1 Tbsp. soy sauce<\/li>\n<li>8 oz. pkg. unflavored tempeh, cut horizontally into 1\/4\u201d strips and then vertically into 1\/2\u201d squares<\/li>\n<li>2 pkgs. (10-12 oz.) frozen chopped kale<\/li>\n<\/ul>\n<p>In a small (10-12\u201d) skillet, stir together water, soy sauce, tempeh and kale.\u00a0 Cover and bring to a boil, then reduce heat to medium and simmer about 5-10 minutes, until kale is almost cooked and tender to taste.\u00a0 Remove lid and continue cooking until water is evaporated.<\/p>\n<p><strong><span style=\"color: #4a750d;\">Step 2:\u00a0 Saute Aromatics and Make Sauce<\/span><\/strong><\/p>\n<ul>\n<li>1 Tbsp. neutrally flavored oil<\/li>\n<li>1-2 Tbsp. chopped garlic (fresh or jarred), to taste<\/li>\n<li>1 Tbsp. lightly packed grated ginger (fresh or jarred)<\/li>\n<li>2 Tbsp. tahini<\/li>\n<li>1 cup vegetable or chicken broth, plus more if needed<\/li>\n<\/ul>\n<p>Push kale and tempeh mixture to sides of pan. Warm oil in center, then stir in garlic and ginger and saute just 3-4 minutes, until fragrant.<\/p>\n<p>Add tahini to garlic and ginger, then gradually pour in broth, using a fork to blend broth, tahini, ginger and garlic, adding additional broth if necessary to make a smooth sauce.<\/p>\n<p><strong><span style=\"color: #4a750d;\">Step 3:\u00a0 Finish Skillet and Serve<\/span><\/strong><\/p>\n<ul>\n<li>2-4 shakes cayenne pepper, more or less, to taste<\/li>\n<li>1-2 tsp. apple cider vinegar<\/li>\n<li>2 cups cooked brown rice (optional)<\/li>\n<\/ul>\n<p>Gently stir sauce into kale and tempeh mixture until combined thoroughly. Simmer another 3-5 minutes for flavors to meld.\u00a0 Season with cayenne, vinegar and additional soy sauce, to taste.<\/p>\n<p>Serve immediately, alongside brown rice, if taste.<\/figcaption><\/figure>\n<ol>\n<li><strong><span style=\"color: #4a750d;\">Buying Tempeh<\/span><\/strong> \u00a0 I like LightLife\u2019s Original Tempeh which is unflavored. Its Three-Grain variety would also work, but it is not gluten free, as barley is one of the three grains. Don\u2019t buy a flavored varieties (like Smoky), which might not pair well with the flavors in this dish.<\/li>\n<li><span style=\"color: #4a750d;\"><strong>Moldy Tempeh?<\/strong><\/span>\u00a0 After a week or so in the frig, tempeh can develop light to dark gray spots. Don\u2019t panic. That is a completely normal.\u00a0 Tempeh is made by fermenting soybeans. Those black spots are spores that indicate the fermentation process is complete.
