{"id":4443,"date":"2020-08-31T22:32:23","date_gmt":"2020-08-31T22:32:23","guid":{"rendered":"http:\/\/cookhappylivehealthy.org\/blog\/?p=4443"},"modified":"2020-10-30T16:01:02","modified_gmt":"2020-10-30T16:01:02","slug":"seasonal-recipe-creamy-coconut-mocktail","status":"publish","type":"post","link":"https:\/\/cookhappylivehealthy.org\/blog\/seasonal-recipe-creamy-coconut-mocktail\/","title":{"rendered":"Seasonal Recipe:  Creamy Coconut Mocktail"},"content":{"rendered":"<p>It&#8217;s the last day of August, but summer isn&#8217;t over yet&#8211;and neither is summer&#8217;s bounty of produce.\u00a0 In fact, September is a banner time of year for produce.\u00a0 So it&#8217;s a great time to boost your vegetable intake and get ready for leaner days.<\/p>\n<p>This cooler is a fun way to get in more vegetables&#8211;it&#8217;s sweet, creamy and nutritious.\u00a0 You might even try adding some kind of alcohol for a &#8220;nutritious cocktail!&#8221;\u00a0 Let me know in the comments if you find a good addition as I&#8217;m no expert in that realm.<\/p>\n<p><strong><span style=\"color: #008000;\">Step 1:\u00a0 Blend Cooler<\/span><\/strong><\/p>\n<ul>\n<li>3 Tbsp. plain, unsweetened coconut yogurt (or Greek yogurt)<\/li>\n<li>1 cup cucumber (any variety) cut into roughly 1\u201d chunks (from about 1 med. cucumber)<\/li>\n<li>\u00bd cup ripe honeydew, cut into roughly 1\u201d chunks<\/li>\n<li>1\/8 tsp. sea salt<\/li>\n<li>\u00bd to 1 tsp. fresh minced rosemary (from about one 3\u201d spring)<\/li>\n<li>2 to 4 tsp fresh lime juice, to taste<\/li>\n<\/ul>\n<p>Combine above ingredients (in the order given) in blender, Vitamix or cup of immersion blender. Blend until very smooth. When almost browned, add cayenne and toast just another 20 to 30 seconds.<\/p>\n<p><strong><span style=\"color: #008000;\">Step 3:\u00a0 Serve Cooler <\/span><\/strong><\/p>\n<p>Serve cooler in a cocktail glass. Sprinkle with toasted nuts.<\/p>\n<p><strong><span style=\"color: #008000;\">Notes:<\/span><\/strong><\/p>\n<ol>\n<li><strong>Freezing Option<\/strong>\u00a0 If desired, freeze for 20 to 30 minutes before serving.<\/li>\n<li><strong>Time Saver<\/strong> Don\u2019t bother peeling or seeding cucumber. \u201cMost of its nutrients are in the edible cucumber peel.\u201d Not to mention they add a cool, lovely green to the cooler. https:\/\/www.livestrong.com\/article\/467346-cucumber-peel-benefits\/<\/li>\n<li><strong>Chile Cashews<\/strong> While the nut topping is optional, it does add a nice bit of texture and a kick of heat that complements the cucumber nicely.
