{"id":459,"date":"2009-06-15T18:49:06","date_gmt":"2009-06-15T18:49:06","guid":{"rendered":"http:\/\/cookhappylivehealthy.org\/blog\/?p=459"},"modified":"2017-11-08T16:06:41","modified_gmt":"2017-11-08T16:06:41","slug":"make-a-simple-salad-special","status":"publish","type":"post","link":"https:\/\/cookhappylivehealthy.org\/blog\/make-a-simple-salad-special\/","title":{"rendered":"Make a Simple Salad Special"},"content":{"rendered":"<p>It seems like I buy at least a couple bottles of salad dressing every time I go to the store.\u00a0 And it seems like I&#8217;m knee-deep in salad dressing every time I&#8217;m pawing through the pantry looking for something else.\u00a0 So it seems like I should have had some salad dressing when friends came for dinner last week.\u00a0 But no, we were completely out.\u00a0 Not even a 1\/2&#8243; dribble languishing in the bottom of some bottle on the frig door.<\/p>\n<p>But sometimes, running out of ta pantry staple can be a good thing as I discovered tonight.<\/p>\n<p>I still haven&#8217;t gotten to the store to buy salad dressing, and the consequences\u00a0 are even worse than running out with guests at the table.\u00a0 After gardening and computering all day, I just wanted something simple for dinner.\u00a0 Some leftover salad topped by canned tuna and a bowl of soup sounded just perfect&#8211;until I remembered our salad dressing situation.<\/p>\n<p>Was I going to have to futz and fuss with a homemade salad dressing before I could sit down and eat?\u00a0 Happily, the words of our local food editor, <a href=\"http:\/\/www.dailycamera.com\/staff\/cindy-sutter\/\" target=\"_blank\">Cindy Sutter<\/a>, came to my rescue.\u00a0 A couple weeks ago she had written an article titled, aptly, &#8220;<a href=\"http:\/\/www.dailycamera.com\/news\/2009\/apr\/28\/simple-salad-dressing-vinaigrette-greens\/\" target=\"_blank\">Easy-to-Make-Salad Dressing<\/a>.&#8221;\u00a0 What was in the basic recipe she learned from her mom?\u00a0 Oil, vinegar, mustard, salt and pepper, maybe some herbs?<\/p>\n<p>With those words of wisdom in my ear, I got out a little bowl and whipped up a little dressing.\u00a0 Taking only two minutes, it didn&#8217;t even come close to dashing my hopes for a simple and fast dinner.\u00a0 Best of all, I got to experience the point of Cindy&#8217;s article:\u00a0 That a freshly homemade dressing, even if super simple, tastes a whole lot better than something that&#8217;s been sitting in a bottle for who knows how long.<\/p>\n<p>Which brings me back to the point of this article:\u00a0 That a fast, fresh salad dressing is an easy way to turn simple tuna salad into expensive bistro fare.<\/p>\n<p><strong>Tuna Salad with Balsamic Dressing<\/strong><\/p>\n<p>Using a fork, whisk the following together in a medium-sized bowl:<\/p>\n<ul>\n<li>1 Tbsp. Dijon mustard<\/li>\n<li>1 Tbsp. olive oil<\/li>\n<li>1 Tbsp. balsamic vinegar<\/li>\n<li>1 tsp. dried leaf oregano<\/li>\n<li>1\/4 tsp. garlic salt<\/li>\n<li>1\/4 tsp. sugar<\/li>\n<li>Freshly ground pepper, to taste<\/li>\n<\/ul>\n<p>To the dressing, add<\/p>\n<ul>\n<li>1 can water-packed, salted Albacore tuna, drained<\/li>\n<\/ul>\n<p>Use the fork to break tuna into small pieces and mix with dressing to coat thoroughly.\u00a0 Place the following in a <a href=\"http:\/\/cookhappylivehealthy.org\/blog\/2009\/02\/18\/healthy-eating-tips-small-plates-big-vegetable-bowls\/\" target=\"_blank\">Big Salad Bowl<\/a> (be sure to see my blog on these special bowls:)<\/p>\n<ul>\n<li>2 cups leftover green salad (e.g., red leaf lettuce, shredded carrots, tomatoes and, for something a little different, thinly sliced cauliflower florets)<\/li>\n<\/ul>\n<p>Add tuna and toss gently to combine with salad.\u00a0 Taste and add more salt, pepper or vinegar, if desired.<\/p>\n<p><span style=\"color:#339966;\">Find out more about making vegetables a lively and luscious part of your life with the help of the<\/span> <a href=\"http:\/\/vegetableamonthclub.com\/\" target=\"_blank\">Vegetable a Month Club<\/a>.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I just wanted to make an easy meal after a long day of gardening and computering.
