{"id":525,"date":"2009-07-22T18:03:39","date_gmt":"2009-07-22T18:03:39","guid":{"rendered":"http:\/\/cookhappylivehealthy.org\/blog\/?p=525"},"modified":"2009-07-22T18:03:39","modified_gmt":"2009-07-22T18:03:39","slug":"about-csas-and-pickled-turnips","status":"publish","type":"post","link":"https:\/\/cookhappylivehealthy.org\/blog\/about-csas-and-pickled-turnips\/","title":{"rendered":"About CSAs and Pickled Turnips"},"content":{"rendered":"<p>If you&#8217;re CSA member (stands for Community Supported Agriculture), then you know about surprises.\u00a0 Open your weekly delivery and there could be anything inside.\u00a0 Last week I got a surprise that probably no one can beat:\u00a0 A jar of pickled turnips!<\/p>\n<p>As a Certified Vegetable Guide (!), I&#8217;m pretty good at devising uses for odd vegetables, but I just had to stash my jar and wait for inspiration.\u00a0 It came Friday night as I was making a kale salad.\u00a0 Usually I &#8220;marinate&#8221; the raw kale with olive oil and lemon juice.\u00a0 Could the pickled beets plus a little of the pickling brine substitute for the lemon?<\/p>\n<p>You bet!\u00a0 It worked perfectlly.\u00a0 Just needed a little sweetness to counterbalance the heartiness of the kale and vinegary-ness of the brine.\u00a0 A few raisins (chopped to distribute them more evenly) did the trick.\u00a0 Walnuts added a little more protein to my vegetarian meal.<\/p>\n<p>The only problem:\u00a0 What if you don&#8217;t have any pickled turnips?\u00a0 I&#8217;m going to work on a recipe to share.\u00a0 It&#8217;s a great use for turnips, which are plentiful and cheap, especially when they can then turn a simple kale salad into something quite unique:<\/p>\n<p>So here&#8217;s the salad recipe:<\/p>\n<p>1 large bunch of kale, stems removed and leaves torn into roughly 2&#8243; squares<\/p>\n<p>1\/4 to 1\/3 cup raisins, chopped roughly<\/p>\n<p>1\/2 cup walnut pieces, toasted lightly<\/p>\n<p>1\/2 cup pickled turnips, cut into 1\/2&#8243; cubes<\/p>\n<p>Toss together in a salad bowl.<\/p>\n<p>1 clove garlic, finely minced<\/p>\n<p>2 Tbsp. olive oil<\/p>\n<p>1\/4 to 1\/3 cup pickling brine.<\/p>\n<p>Combine in a small bowl and whisk together with a fork.\u00a0 Drizzle over salad and toss to coat evenly.\u00a0 Allow to sit and &#8220;marinate&#8221; for 30 to 60 minutes, if possible.<\/p>\n<p>Find out more from the Certified Vegetable Guide:\u00a0 visit the <a href=\"http:\/\/vegetableamonthclub.com\/index.html\" target=\"_blank\">Vegetable a Month Club<\/a> and check out the <a href=\"http:\/\/vegetableamonthclub.com\/thismonthvegetable.html\" target=\"_blank\">demo site for spinach<\/a>.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>If you&#8217;re CSA member (stands for Community Supported Agriculture), then you know about surprises.\u00a0 Open your weekly delivery and there could be anything inside.\u00a0 Last week I got a surprise that probably no one can beat:\u00a0 A jar of pickled turnips!
