{"id":5651,"date":"2023-02-07T18:44:57","date_gmt":"2023-02-07T18:44:57","guid":{"rendered":"http:\/\/cookhappylivehealthy.org\/blog\/?p=5651"},"modified":"2023-02-07T18:47:38","modified_gmt":"2023-02-07T18:47:38","slug":"recipe-warming-winter-kale-salad","status":"publish","type":"post","link":"https:\/\/cookhappylivehealthy.org\/blog\/recipe-warming-winter-kale-salad\/","title":{"rendered":"Recipe: Warming Winter Kale Salad"},"content":{"rendered":"<h3 style=\"text-align: center;\"><span style=\"color: #993300;\">Squashes and Roots<br \/>\n<\/span><\/h3>\n<p>Winter is the time for hard squashes as well as root vegetables like beets, carrots, rutabagas, potatoes, celery root, turnips and parsnips.\u00a0 They are at their flavorful best in winter and are also more affordable.<\/p>\n<figure id=\"attachment_5653\" aria-describedby=\"caption-attachment-5653\" style=\"width: 290px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-5653\" src=\"http:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2023\/02\/IMG_0078-300x225.jpg\" alt=\"Root Vegetables from Monroe Organic Farms Witner Share\" width=\"300\" height=\"225\" \/><figcaption id=\"caption-attachment-5653\" class=\"wp-caption-text\">Here are some of the many root vegetables that come in my winter farm share.<\/figcaption><\/figure>\n<p>As part of my winter farm share from <a href=\"https:\/\/www.monroefarm.com\" target=\"_blank\" rel=\"noopener noreferrer\">Monroe Organic Farm<\/a>, I get <strong>lots<\/strong> of squash and roots&#8211;and I do love their hearty yumminess added to soups and stews, slow-cooked with meat or just roasted into tender sweet nuggets.<\/p>\n<p>But about this time of year, I&#8217;m ready for a little crispness and crunch. . . and yet, it&#8217;s still cold and wintry so I pretty much shudder at the thought of a typical summer salad (you know, lettuce, tomatoes and cucumbers.)<\/p>\n<p>So a couple days ago, I made a combo of crisp and crunchy kale with warm winter veggie toppings&#8211;a perfect compromise!<\/p>\n<h3 style=\"text-align: center;\"><span style=\"color: #993300;\">The Ingredients<\/span><\/h3>\n<p><span style=\"text-decoration: underline;\">Base:<\/span> Kale of any variety; I loved the combination of green and red curly kale<\/p>\n<p><span style=\"text-decoration: underline;\">Toppings:<\/span>\u00a0 Roasted kabocha squash sauteed with onions and yellow peppers from the freezer (although red peppers would have added some nice color!)<\/p>\n<p><span style=\"text-decoration: underline;\">Dressing:<\/span>\u00a0 Basic lemon, garlic, olive oil and salt and pepper.\u00a0 Add a little grainy mustard for some zest<\/p>\n<h3 style=\"text-align: center;\"><span style=\"color: #993300;\">Make It Easy<\/span><\/h3>\n<p>I roasted a squash a day or two earlier for dinner, so it only had to be scooped out in chunks and then sauteed with the onions and peppers.<\/p>\n<h3 style=\"text-align: center;\"><span style=\"color: #993300;\">BTW<\/span><\/h3>\n<p>Winter is a great time for kale or any of the other greens like chard and collards.\u00a0 As cold-weather crops they taste best in winter&#8211;and the price is right.<\/p>\n<p>Almost any of the root vegetables can be great on a winter salad&#8211;just roast them first for best flavor.<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Squashes and Roots Winter is the time for hard squashes as well as root vegetables like beets, carrots, rutabagas, potatoes, celery root, turnips and parsnips.\u00a0 They are at their flavorful best in winter and are also more affordable.
