A Quick, Boredom-Beating Remedy"},"content":{"rendered":"<p>Raise a hand if you&#8217;re often bored with the food that shows up on your plate. While a little boredom here and there is fairly common and not too worrisome, a steady diet of boring meals is actually dangerous.<\/p>\n<p>That&#8217;s because boring meals can leave us feeling &#8220;blah,&#8221; rather than satisfied, comforted and nourished after a meal. And feeling &#8220;blah&#8221; about meals is a perfect setup to either opt for fast foods or finish a meal with a big bowl of ice cream or other treat&#8211;and our food world is filled with plenty of tempting options!<\/p>\n<p><strong>Meal Making Transformation<\/strong> is all about making healthy meals manageable enough so we can make and eat them regularly&#8211;and enjoy them fully. This is why my recipes are often just quick ideas to spark up your mealtimes. The following &#8220;recipe&#8221; starts with a green salad that we all know how to make but adds an easy Asian twist for something a little different.<\/p>\n<p>Like many of the good meal ideas we come up with, this one started with some leftover ingredients: chopped ginger from making golden milk and cilantro from a Mexican meal. So:<\/p>\n<ul>\n<li>I added a lot of chopped cilantro to the salad base&#8211;which adds a lot of flavor and can be helpful for cleansing the body<\/li>\n<li>Instead of the usual lemon, garlic and olive oil, I dressed the salad with a combo of ginger, lime and safflower oil.<\/li>\n<\/ul>\n<p>Voila! A quick and snappy variation on the usual green salad.<\/p>\n<p><span style=\"text-decoration: underline;\">My Salad Base<\/span><\/p>\n<ul>\n<li>Red leaf lettuce and cilantro<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\">Toppings<\/span><\/p>\n<ul>\n<li>Red and yellow peppers, red cabbage, toasted almonds<\/li>\n<li>Other options: Fried radish sticks, fresh pear, thinly sliced celery, pumpkin seeds<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\">Dressing<\/span> (Amounts are approximate; adjust to taste)<\/p>\n<ul>\n<li>~1 tsp. fresh finely chopped or grated ginger, low-heat sauteed<\/li>\n<li>~1 Tbsp. canola, safflower or other neutral-flavored oil<\/li>\n<li>~1-2 Tbsp. freshly squeezed lime juice<\/li>\n<li>Salt and pepper, to taste<\/li>\n<\/ul>\n<p>Options: 1 tsp. soy sauce (for all or part of the salt), 1\/2 tsp. toasted sesame oil<\/p>\n<p><span style=\"text-decoration: underline;\">Make It a Meal<\/span><\/p>\n<ul>\n<li>Top with chicken breast, white or aduki beans, steak or pork strips, or even white fish or shrimp<\/li>\n<\/ul>\n<figure id=\"attachment_5775\" aria-describedby=\"caption-attachment-5775\" style=\"width: 350px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-5775\" src=\"http:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2023\/03\/Green-Salad-Asian-Twist2-300x225.png\" alt=\"\" width=\"360\" height=\"270\" srcset=\"https:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2023\/03\/Green-Salad-Asian-Twist2-300x225.png 300w, https:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2023\/03\/Green-Salad-Asian-Twist2-1024x768.png 1024w, https:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2023\/03\/Green-Salad-Asian-Twist2-768x576.png 768w, https:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2023\/03\/Green-Salad-Asian-Twist2.png 1280w\" sizes=\"auto, (max-width: 360px) 100vw, 360px\" \/><figcaption id=\"caption-attachment-5775\" class=\"wp-caption-text\">Raw ginger can be pretty sharp. To take the edge off, I sauteed in 1-2 tsp. neutrally-flavored oil over low-heat for a couple minutes. At the same time, I toasted the almonds.
