{"id":58,"date":"2008-07-08T11:23:26","date_gmt":"2008-07-08T11:23:26","guid":{"rendered":"http:\/\/cookhappylivehealthy.org\/blog\/?p=58"},"modified":"2017-11-08T16:08:00","modified_gmt":"2017-11-08T16:08:00","slug":"doubling-your-vegetable-dollars","status":"publish","type":"post","link":"https:\/\/cookhappylivehealthy.org\/blog\/doubling-your-vegetable-dollars\/","title":{"rendered":"Doubling Your Vegetable Dollars"},"content":{"rendered":"<p>There are a lot of stems, stalks and tops going down the garbage grinder that could actually be put to use.<span> <\/span>It\u2019s called \u201cdoubling your vegetable dollars,\u201d and it just takes looking at vegetables in new and creative ways.<span> <\/span>Remember the article on Radishal Solutions?\u00a0 It talked about a new way to use those radishes that are almost always available and always cheap.<span> <\/span>I promised some suggestions on using the tops.<span> <\/span>Here\u2019s one:<\/p>\n<h3>Asian Hamburger Skillet<\/h3>\n<ul>\n<li>1 lb. lean hamburger<\/li>\n<li>1 med. red onion, sliced about \u00bc\u201d thick, then cut into 2\u201d lengths<\/li>\n<li>1 bunch radishes, cut in matchsticks (or halved and sliced about 1\/8\u201d thick)<\/li>\n<li>4 carrots, julienned or cut in \u00bc\u201d slices<\/li>\n<li>1 bunch radish tops, cut roughly into 1\u201d pieces<\/li>\n<li>1 \u00bd tsp. ginger paste<\/li>\n<li>2 Tbsp. fish sauce<\/li>\n<\/ul>\n<p class=\"MsoNormal\">In a large saut\u00e9 pan, cook hamburger over medium high heat, until just beginning to brown, breaking into small bits with spatula.<span> <\/span>Stir in onion and radishes and cook another 2-3 minutes.<span> <\/span>Stir in carrots, radish tops, ginger paste and fish sauce and cook about 5-10 minutes, until onions are softened and hamburger is cooked through.<span> <\/span><\/p>\n<ul>\n<li>1 lime (optional)<\/li>\n<li>Freshly ground pepper, to taste<\/li>\n<\/ul>\n<p>Sprinkle with lime juice (if using) and pepper, to taste.<span> <\/span>Serve immediately.<span> <\/span><\/p>\n<p class=\"MsoNormal\">\n","protected":false},"excerpt":{"rendered":"<p>There are a lot of stems, stalks and tops going down the garbage grinder that could actually be put to use.
