Being too lazy to make a pesto, I turned instead to its simpler&#8212;and easier&#8212;cousin, pistou.<\/p>\n<p>Traditionally, pistou is made with just basil, olive oil and garlic. In my case, I didn&#8217;t even want to peel and chop garlic, so I modified things even further:<\/p>\n<h3><span style=\"color: #339966;\"><strong>Mary&#8217;s Modified Fresh Herb Pistou<\/strong><\/span><\/h3>\n<p><strong>Step 1: Chop Nuts<\/strong><\/p>\n<ul>\n<li>2\u00a0Tbsp. pecans<\/li>\n<\/ul>\n<p>Place nuts in the chopper attachment of immersion blender and chop until fairly fine, but with a little texture.<\/p>\n<p><strong>Step 2: Process Pistou<\/strong><\/p>\n<ul>\n<li>~ 1\u00bd cups fresh herbs, e.g.,\n<ul>\n<li>1\/3 cup oregano, big stems removed<\/li>\n<li>1-2 tsp. thyme (stems removed)<\/li>\n<li>1 cup parsley (chopped roughly, stems can be included)<\/li>\n<\/ul>\n<\/li>\n<li>2 Tbsp. olive oil (or more for a thinner, smoother pistou)<\/li>\n<li>1\/4 tsp. salt, more or less to taste<\/li>\n<li>Freshly ground pepper (or cayenne pepper), to taste<\/li>\n<\/ul>\n<p>Combine herbs, oil, salt and pepper in the blender and process to reach desired texture (see Notes below.)<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-6202\" src=\"http:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2024\/02\/Pistou-Fresh-Herb-3-300x225.jpg\" alt=\"\" width=\"451\" height=\"338\" \/><\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-6203\" src=\"http:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2024\/02\/Pistou-Fresh-Herb-4-e1707697039864-300x270.jpg\" alt=\"\" width=\"449\" height=\"404\" \/><\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-6201\" src=\"http:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2024\/02\/Pistou-Fresh-Herb-2-300x225.jpg\" alt=\"\" width=\"451\" height=\"338\" \/><\/p>\n<div>\n<p><strong>Chunky or Smooth?<\/strong>\u00a0I went light on the olive oil, leaving my pistou a little drier and chunkier. You can certainly use more oil to make your pistou thinner and smoother&#8211;which is actually more traditional.<\/p>\n<p><strong>Other Herbs<\/strong>\u00a0Experiment with sorrel (2-3 leaves), fennel fronds (up to 1\/2 cup), and maybe 1-2 tsp. of tarragon.
