{"id":6401,"date":"2024-08-07T23:11:04","date_gmt":"2024-08-07T23:11:04","guid":{"rendered":"https:\/\/cookhappylivehealthy.org\/blog\/?p=6401"},"modified":"2024-08-08T11:36:36","modified_gmt":"2024-08-08T11:36:36","slug":"recipe-summer-vegetable-pad-thai","status":"publish","type":"post","link":"https:\/\/cookhappylivehealthy.org\/blog\/recipe-summer-vegetable-pad-thai\/","title":{"rendered":"Recipe: Summer Vegetable Pad Thai"},"content":{"rendered":"<p>This recipe may look fairly long, but not to worry: It makes an entire meal in one dish!<\/p>\n<p><span style=\"color: #993366;\"><strong>Step 1: Cook Pasta<\/strong><\/span><\/p>\n<ul>\n<li>8 oz. whole grain brown rice pad thai (or fettuccini) noodles (Tinkyada is a good brand)<\/li>\n<li>\u00bd tsp. sea salt<\/li>\n<\/ul>\n<p>Cook and drain pasta according to package instructions, return to pot and cover to keep warm. (Alternatively, serve over brown rice as pictured above.)<\/p>\n<p><span style=\"color: #993366;\"><strong>Step 2: Prepare Peanut Sauce<\/strong><\/span><\/p>\n<ul>\n<li>1 Tbsp. chopped garlic (from 1-2 cloves)<\/li>\n<li>1 Tbsp. chopped jalapeno pepper, more or less to taste<\/li>\n<li>2 Tbsp. lime juice (from 1-2 limes)<\/li>\n<li>\u00bd cup smooth, unsalted peanut butter<\/li>\n<li>\u00bc cup soy sauce<\/li>\n<li>2 Tbsp. coconut (or brown) sugar<\/li>\n<li>1 Tbsp. toasted sesame oil<\/li>\n<li>\u00bc to \u00bd cup water, as needed<\/li>\n<\/ul>\n<p>Combine garlic, jalapeno and lime juice in cup of immersion blender. Allow to sit for 5 -15 minutes to take the raw edge off garlic.<\/p>\n<p>Add peanut butter, soy sauce, sugar and oil and process until smooth. Then add water, 1 Tbsp. at a time, until sauce is a pourable but still fairly thick. Taste and blend in more jalapeno if more heat is desired.<\/p>\n<p><span style=\"color: #993366;\"><strong>Step 3: Cut Vegetables, Stir Fry and Combine with Noodles<\/strong><\/span><\/p>\n<ul>\n<li>1 Tbsp. neutrally flavored oil (e.g., canola, safflower)<\/li>\n<li>1 lrg. onion, sliced about 1\/8\u201d thick x 2\u201d long<\/li>\n<li>2-3 med. carrots, cut in matchsticks<\/li>\n<li>1 med. green pepper, sliced \u00bc\u201d thick x 2\u201d long<\/li>\n<li>1 med. yellow squash, cut in matchsticks<\/li>\n<li>1 med cucumber, cut in matchsticks<\/li>\n<li>1 Tbsp. toasted sesame oil<\/li>\n<\/ul>\n<p><em>Cut Vegetables<\/em>\u00a0 Cut vegetables and place in prep bowls. (See notes below)<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-6405\" src=\"http:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2024\/08\/Pad-Thai-3-300x225.jpg\" alt=\"\" width=\"453\" height=\"340\" \/><\/p>\n<p><em>Stir Fry Vegetables<\/em>\u00a0 Heat the 1 Tbsp. oil over medium-high heat, then stir-fry vegetables quickly just until crisp tender, in their order of hardness: onion, carrots, green pepper and yellow squash. Add cucumbers at the end for just a couple minutes or leave raw.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-6403\" src=\"http:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2024\/08\/Pad-Thai-1-300x225.jpg\" alt=\"\" width=\"454\" height=\"340\" \/><\/p>\n<p><em>Combine Noodles and Vegetables<\/em>\u00a0 Place cooked noodles in a large pasta dish, top with vegetables, sprinkle with sesame oil and toss gently to combine.<\/p>\n<p><span style=\"color: #993366;\"><strong>Step 3: Saute Chicken<\/strong><\/span><\/p>\n<ul>\n<li>\u00bd to \u00be lb. boneless, skinless chicken breasts, cut into slices \u00bd\u201d thick (optional)<\/li>\n<\/ul>\n<p>In same pan used to stir-fry vegetables, saute chicken over medium-low heat until lightly browned and cooked through, then slice into roughly 1\u201d pieces. Add to noodle mixture.<\/p>\n<p><strong><span style=\"color: #993366;\">Step 4: Finish Dish<\/span><\/strong><\/p>\n<ul>\n<li>Chopped peanuts<\/li>\n<li>Chopped cilantro, to taste<\/li>\n<li>Fresh lime juice, to taste<\/li>\n<li>Chile oil or paste, to taste<\/li>\n<\/ul>\n<p>Pour as much peanut sauce as desired over dish and toss gently to combine, reserving any extra sauce to serve at the table. Serve hot or at room temperature, topped with cilantro, additional lime juice, and\/or chile paste or oil, as desired.<\/p>\n<p><span style=\"color: #993366;\"><strong>NOTES<\/strong><\/span><\/p>\n<p><span style=\"color: #000000;\"><strong>Heat Options<\/strong><\/span>\u00a0 Instead of, or in addition to the jalapenos, chile oil or paste can be used, especially at the end if more heat is desired.<\/p>\n<p><span style=\"color: #000000;\"><strong>Ginger<\/strong> <strong>Option\u00a0 <\/strong><\/span>Try adding 1-2 tsp of freshly grated ginger (or \u00bd tsp. powdered ginger) at the same time as the garlic and jalapenos.<\/p>\n<p><strong><span style=\"color: #000000;\">Cutting Vegetable Matchsticks<\/span>\u00a0 <\/strong>Note that vegetables can also be simply diced.<\/p>\n<p><em>For Long and Narrow Vegetables: Carrots, Broccoli Stems<\/em> Cut horizontally into ~ 2\u201d pieces. Slice each piece vertically into \u00bc\u201d slabs and stack 2 high. Slice vertically into matchsticks.<\/p>\n<p><em>For Rounder Vegetables: Yellow Squash, Cucumbers, Radishes\u00a0<\/em> Slice crosswise into rounds. Stack into threes and slice into matchsticks.<\/p>\n<p><strong><span style=\"color: #000000;\">Vegetable Options<\/span>\u00a0<\/strong> Summer offers an array of options. Try to choose ones that create a nice color combination:<\/p>\n<ul>\n<li>Red, yellow or orange peppers<\/li>\n<li>Radishes<\/li>\n<li>Broccoli florets or stems<\/li>\n<li>Cauliflower florets<\/li>\n<li>Zucchini<\/li>\n<li>Green beans, cut in 1&#8243; lengths<\/li>\n<\/ul>\n<p><span style=\"color: #000000;\"><strong>Protein Options<\/strong><\/span><\/p>\n<ul>\n<li>White Fish<\/li>\n<li>Beef Strips<\/li>\n<li>Pork, ground or pulled<\/li>\n<li>Egg strips<\/li>\n<li>Tofu (cubed and fried)<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>This recipe may look fairly long, but not to worry: It makes an entire meal in one dish!
