{"id":690,"date":"2010-02-01T03:52:42","date_gmt":"2010-02-01T03:52:42","guid":{"rendered":"http:\/\/cookhappylivehealthy.org\/blog\/?p=690"},"modified":"2010-02-01T03:52:42","modified_gmt":"2010-02-01T03:52:42","slug":"vegetable-exhaustion","status":"publish","type":"post","link":"https:\/\/cookhappylivehealthy.org\/blog\/vegetable-exhaustion\/","title":{"rendered":"Vegetable Exhaustion"},"content":{"rendered":"<h3>Investment Thinking + 4 Days of Meal Ideas Put Ease into a Vegetable Life<\/h3>\n<p>I suffered a case of Vegetable Exhaustion last night while driving to a friend&#8217;s house, loaded with prepared vegetables.\u00a0 After a nasty ski accident landed her in bed for three months, she readily accepted my offer for a few vegetable dishes.\u00a0 So I spent the better part of a day making a roasted beet salad, green salad with saut\u00e9ed mushrooms and onions, Beef Stew with Tomatoes, Turnips and Leeks, and kale salad with golden raisins and almonds.<\/p>\n<figure style=\"width: 325px\" class=\"wp-caption alignleft\"><a href=\"http:\/\/vegetableamonthclub.com\/\"><img loading=\"lazy\" decoding=\"async\" title=\"Beef Stew with Tomatoes, Turnips and Leeks\" src=\"http:\/\/i722.photobucket.com\/albums\/ww230\/mcolletterogers\/Leeks_Beef_Stew_in_Slow_CookerPNG.png\" alt=\"Beef Stew with Tomatoes, Turnips and Leeks\" width=\"335\" height=\"258\" \/><\/a><figcaption class=\"wp-caption-text\">Find all sorts of great recipes at VegetableAMonth.com, like this Beef Stew with Tomatoes, Turnips and Leeks<\/figcaption><\/figure>\n<p>&#8220;Dang!&#8221; I groused to myself on the drive to her house.\u00a0 &#8220;How could it have take so long to make four vegetable dishes?&#8221;<\/p>\n<p>On average, I get sucked into these head debates about once each month.\u00a0 A tipping point is reached, I get overwhelmed and aggravated, and off I go, demanding to know why vegetables take so long.\u00a0 I&#8217;m guessing I&#8217;m not alone in these outbursts.\u00a0 In fact, the time commitment required for vegetable cooking is undoubtedly a big part of the reason only one in ten of us eats the recommended daily servings.<\/p>\n<p>So is there any hope for a peaceful coexistence with vegetables?\u00a0 There has to be.\u00a0 Vegetables are far too important (and delicious) to be squeezed out by the clock.\u00a0 But how to still the discontent and debate provoked by these hard-to-crack powerhouses?<\/p>\n<p>Here&#8217;s what calmed me down yesterday:\u00a0 &#8220;Investment thinking,&#8221; or taking the long view.\u00a0 If I limited my view plane to a single day, then of course I spent way too much time on vegetables yesterday.\u00a0 But if I instead took a long view of things, what seemed like wasted time was magically transformed into <em>an<\/em> <em>investment with a payoff<\/em>.<\/p>\n<p>Remember, I had made <em><strong>four <\/strong><\/em>vegetable dishes\u2014some in <em><strong>quadruple <\/strong><\/em>batches!\u00a0 Although several servings were going to my bedridden friend, one day&#8217;s effort still left me with enough green stuff for three more days.\u00a0 And truth be told, I didn&#8217;t really spend the <em>entire<\/em> day cooking vegetables, only about three hours.\u00a0 So a three-hour investment yielded a total of\u00a0 four days&#8217; worth of lunches and dinners.\u00a0 Not a bad return!\u00a0 In fact, that payoff is a lot better option than driving to, ordering and coming home with fast food multiple times.<\/p>\n<p>But I didn&#8217;t stop with taking a long view.\u00a0 Not wanting any of my payoff to go to waste, I also jotted down a quick plan for using everything up to maximum advantage.\u00a0 Reproduced below, it also gives a few hints for maximizing prep time.\u00a0 For instance, I actually started the green salad a night before, taking advantage of the extra meal making time made available by having leftovers for the rest of the meal.\u00a0 See if any of my efficiency tricks can help lighten your nightly meal making load.<\/p>\n<h4><span style=\"color:#993300;\">Saturday&#8211;Start Making Ahead <\/span><\/h4>\n<h4 style=\"padding-left:30px;\"><span style=\"color:#808000;\">Dinner<\/span><\/h4>\n<ul>\n<li>Leftover Coq au Vin (a fancy French name for chicken cooked in wine)<\/li>\n<li>Leftover Brown Rice<\/li>\n<li>Simple Green Salad with shredded Jerusalem artichokes and red peppers, topped with saut\u00e9ed mushrooms and onions<\/li>\n<\/ul>\n<p style=\"padding-left:30px;\"><span style=\"color:#333300;\"><strong>Notes<\/strong><\/span>:\u00a0 With the entr\u00e9e and starch already cooked, this was a good night to<\/p>\n<ol>\n<li>cut and wash enough lettuce for several meals,<\/li>\n<li>make enough saut\u00e9ed mushrooms and onions for two nights,<\/li>\n<li>roast some beets, and<\/li>\n<li>throw a few potatoes in the oven to bake.\u00a0 Now I had a few &#8220;cooked resources&#8221; to work with.<\/li>\n<\/ol>\n<p><strong><span style=\"color:#993300;\">Sunday, the Big Vegetable Prep Day<\/span><\/strong><\/p>\n<p style=\"padding-left:30px;\"><span style=\"color:#808000;\"><strong>Breakfast<\/strong><\/span><\/p>\n<ul>\n<li>Leftover Coq au Vin<\/li>\n<\/ul>\n<p style=\"padding-left:30px;\"><strong>Notes<\/strong>:\u00a0 Eating leftovers again freed up time to brown the meat for Beef Stew with Tomatoes and Turnips and get it into the crockpot.<\/p>\n<p style=\"padding-left:30px;\"><span style=\"color:#808000;\"><strong>Lunch<\/strong><\/span><\/p>\n<ul>\n<li>Roasted Beet Salad with Apples, Celery and Nuts<\/li>\n<\/ul>\n<p style=\"padding-left:30px;\"><strong>Notes<\/strong>:\u00a0 Because the beets were roasted the night before, preparing the beet salad was easy.\u00a0 That, in turn, freed up time to prepare the vegetables for the Beef Stew, make croutons to freshen up the salad, and prep a double batch of kale salad plus two batches of kale for saut\u00e9ing.<\/p>\n<p style=\"padding-left:30px;\"><span style=\"color:#808000;\"><strong>Dinner<\/strong><\/span><\/p>\n<ul>\n<li><a href=\"http:\/\/vegetableamonthclub.com\/\" target=\"_blank\">Slow Cooker Beef,\u00a0 Tomato and Turnip Stew<\/a><\/li>\n<li>Leftover Green Salad with Saut\u00e9ed Mushrooms and Onions and Fresh Croutons<\/li>\n<\/ul>\n<p style=\"padding-left:30px;\"><strong>Notes<\/strong>:\u00a0\u00a0 By the time dinner rolled around, the slow cooker stew smelled and tasted divine and a great salad was had by just reheating the saut\u00e9ed mushrooms and onions and tossing on some fresh croutons.\u00a0 The payoff begins.<\/p>\n<p><span style=\"color:#993300;\"><strong>Monday:\u00a0 More Payoffs<\/strong><\/span><\/p>\n<p style=\"padding-left:30px;\"><strong><span style=\"color:#808000;\">Breakfast<\/span><\/strong><\/p>\n<ul>\n<li>Leftover Beef Stew<\/li>\n<\/ul>\n<p style=\"padding-left:30px;\"><span style=\"color:#808000;\"><strong>Lunch<\/strong><\/span><\/p>\n<ul>\n<li>Leftover Salad, Nicoise Style, with canned tuna, some of the leftover baked potatoes, chopped apples and frozen petite green beans<\/li>\n<\/ul>\n<p style=\"padding-left:30px;\"><strong><span style=\"color:#808000;\">Dinner<\/span><\/strong><\/p>\n<ul>\n<li>Thai Coconut Soup (Tested the recipe for <a href=\"http:\/\/cookhappylivehealthy.org\/blog\/2010\/01\/31\/thai-coconut-shrimp-or-tofu-soup\/\" target=\"_blank\">previous blog<\/a>.)<\/li>\n<li>Brown Basmati Rice<\/li>\n<li>Orange Slices<\/li>\n<\/ul>\n<p style=\"padding-left:30px;\"><span style=\"color:#333300;\"><strong>Notes: <\/strong><\/span>No problem making a new vegetable soup since the rest of the day has required no vegetable cooking.<\/p>\n<p><strong><span style=\"color:#800000;\">Tuesday<\/span><\/strong><\/p>\n<p style=\"padding-left:30px;\"><strong><span style=\"color:#808000;\">Breakfast<\/span><\/strong><\/p>\n<ul>\n<li>Leftover Beet Salad<\/li>\n<\/ul>\n<p style=\"padding-left:30px;\"><span style=\"color:#808000;\"><strong>Lunch<\/strong><\/span><\/p>\n<ul>\n<li>More Salad, Nicoise Style<\/li>\n<\/ul>\n<p style=\"padding-left:30px;\"><span style=\"color:#808000;\"><strong>Dinner<\/strong><\/span><\/p>\n<ul>\n<li>Leftover Beef Stew<\/li>\n<li>Kale Salad<\/li>\n<\/ul>\n<p style=\"padding-left:30px;\"><span style=\"color:#333300;\"><strong>Notes: <\/strong><\/span>Again, no problem making the kale salad since I&#8217;ve had leftovers the rest of the day and the kale is already cut and washed.<\/p>\n<p><span style=\"color:#800000;\"><strong>Wednesday&#8211;Yet One More Day of Payoffs <\/strong><\/span><\/p>\n<p style=\"padding-left:30px;\"><span style=\"color:#808000;\"><strong>Breakfast<\/strong><\/span><\/p>\n<ul>\n<li>Leftover Kale Salad pumped up with leftover Brown Basmati Rice<\/li>\n<\/ul>\n<p style=\"padding-left:30px;\"><strong><span style=\"color:#808000;\">Lunch<\/span><\/strong><\/p>\n<ul>\n<li>Tomato Basil Soup (Imagine brand)<\/li>\n<li>Leftover frozen green beans from Salad Nicoise<\/li>\n<\/ul>\n<p style=\"padding-left:30px;\"><span style=\"color:#808000;\"><strong>Dinner<\/strong><\/span><\/p>\n<ul>\n<li>Sauteed Kale with Onions and Garlic<\/li>\n<li>Leftover Baked Potatoes with Miso Gravy<\/li>\n<li>Baked Apples<\/li>\n<\/ul>\n<p>Hopefully this &#8220;demo&#8221;
