As promised, here&#8217;s another spice blend using garlic granules:<\/p>\n<p><strong><span style=\"color: #ff6600;\">Super Simple Creole Seasoning<\/span><\/strong><\/p>\n<p>Makes enough to season 2 servings&#8211;<a href=\"https:\/\/us-ms.gr-cdn.com\/getresponse-BDYYv\/documents\/a2c1f18c-38cf-46c3-8d79-d9bad6594720.pdf\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #ff6600;\">Get the Print Version<\/span><\/a><\/p>\n<ul>\n<li>1 tsp. smoked sweet Spanish paprika<\/li>\n<li>1 tsp. garlic granules<\/li>\n<li>\u00bc tsp. sea salt<\/li>\n<li>1\/16 tsp. black pepper<\/li>\n<li>1\/32 tsp. cayenne pepper, more or less to taste<\/li>\n<\/ul>\n<p>Stir together all ingredients in a small bowl. Use as a rub for fish, chicken or pork before cooking<\/p>\n<p><strong><span style=\"color: #ff6600;\">Seasoning Notes<\/span><\/strong><\/p>\n<p><strong>1. Add Some Herbs<\/strong>\u00a0 Creole Seasoning commonly includes dried leaf thyme and oregano. If you have the time to experiment, bump up this super simple mixture with \u00bc tsp. of each.<\/p>\n<p><strong>2. Adjust the Heat<\/strong>\u00a0 Make it as hot or mild as you like by adjusting the amount of cayenne pepper, although I&#8217;d put in at least a tiny pinch to give it a little punch<\/p>\n<p><strong>3. Smoked Paprika<\/strong>\u00a0 While some recipes use regular paprika, it is a little low on flavor, so I use sweet smoked Spanish paprika.<\/p>\n<p><strong>4. Variations<\/strong>\u00a0 As with any spice blend, there are many ingredient variations. If you are interested, just search on \u201cCreole seasoning recipe\u201d and have fun experimenting. You\u2019ll also get ideas for all the different dishes and foods that pair well with the seasoning. I\u2019m anxious to try some\u2014and wonder if a jar of Creole seasoning might be a good Christmas gift!<\/p>\n<p><span style=\"color: #ff6600;\"><strong>Making the Creole-Seasoned White Fish<\/strong><\/span><\/p>\n<p><strong>The Basics<\/strong> Use about half the seasoning to rub both sides of a 4-6 oz. fish filet, then saute over medium-low to low heat until fish flakes, flipping halfway.<\/p>\n<p><span style=\"color: #ff6600;\"><strong>Some Fine Points<\/strong><\/span><\/p>\n<ul>\n<li>If using frozen fish, it&#8217;s best to let it thaw slowly in the refrigerator all day.<\/li>\n<li>Unwrap fish and thaw between paper towels to absorb excess moisture.<\/li>\n<li>Rub with seasoning an hour or two in advance to help firm the fish and allow the seasoning to better flavor it.<\/li>\n<li>Cook fish on medium-low heat for just 1-2 minutes to crisp it a little, then reduce heat to low to finish cooking without getting dry and tough.<\/li>\n<li>Right before fish is done, add 2-4 Tbsp. water to deglaze and gently finish cooking fish with some moisture.
