Maybe it&#8217;s because I love potatoes so much, but I couldn&#8217;t stop thinking about those tasty potato halves filled with fluffy mashed potatoes and topped with gooey melted cheese. Sun-dried tomatoes, reconstituted and chopped small, add the right saltiness and pungency to the filling so I don&#8217;t miss the cheese. Of course it doesn&#8217;t hurt that the filling also includes bacon&#8211;along with butter and whole coconut milk yogurt!<\/p>\n<p style=\"text-align: left;\">Fear not if you&#8217;re vegan, however. For the bacon, I experimented with Pumfu Chorizo Crumbles, a plant-based protein made from organic pumpkin seeds with real food chorizo flavors. It made an excellent plant-based substitute. <img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-7293\" src=\"http:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2026\/05\/Pumfu-300x300.png\" alt=\"\" width=\"185\" height=\"185\" srcset=\"https:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2026\/05\/Pumfu-300x300.png 300w, https:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2026\/05\/Pumfu-150x150.png 150w, https:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2026\/05\/Pumfu.png 520w\" sizes=\"auto, (max-width: 185px) 100vw, 185px\" \/><\/p>\n<p>One problem is that twice-bakeds do take a bit of time. This is also partly why I rarely made them. Many nights I can barely get a potato baked for dinner, much less scoop and fill them up for a second baking. But the effort is well worth it. In fact, I&#8217;ve made them three times over the last few weeks! And be sure to make double for your effort because they make great leftovers.<\/p>\n<figure id=\"attachment_7294\" aria-describedby=\"caption-attachment-7294\" style=\"width: 399px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-7294\" src=\"http:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2026\/05\/Twice-baked-Cabbage-300x225.jpeg\" alt=\"\" width=\"409\" height=\"307\" srcset=\"https:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2026\/05\/Twice-baked-Cabbage-300x225.jpeg 300w, https:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2026\/05\/Twice-baked-Cabbage.jpeg 640w\" sizes=\"auto, (max-width: 409px) 100vw, 409px\" \/><figcaption id=\"caption-attachment-7294\" class=\"wp-caption-text\">The first night I served with sauteed red cabbage.<\/figcaption><\/figure>\n<p>Although there is nothing too hard about making this dish, there are a number of steps so it will be helpful to <a href=\"https:\/\/us-ms.gr-cdn.com\/getresponse-BDYYv\/documents\/4b870af4-88e6-43e8-ae4c-70701e3f5352.pdf\" target=\"_blank\" rel=\"noopener\">print the full recipe PDF here<\/a>. Following is a summary of the steps.<\/p>\n<p><span style=\"color: #ff6600;\"><strong>Step 1: VERY IMPORTANT Advance Prep<\/strong><\/span><\/p>\n<ul>\n<li><strong>Bake Potatoes<\/strong> Be sure to start baking the potatoes and soaking the tomatoes about an hour and a half before mealtime which will allow time to bake the potatoes, cool, scoop and fill them and then bake again. Note the recipe&#8217;s tip for speeding the initial baking time: 2 minutes in the microwave will reduce oven time by 10 to 20 minutes.<\/li>\n<li><strong>Soak Tomatoes<\/strong> Place sun-dried tomatoes in a small bowl with water to cover and let soak at least 20 to 30 minutes or longer until softened. Chop into small, 1\/2&#8243; pieces.<\/li>\n<\/ul>\n<p><strong><span style=\"color: #ff6600;\">S<strong>t<\/strong>ep 2: Cook and Chop the Bacon and Saute Sliced Green Onions<\/span><\/strong> (unless raw onions are preferred)<\/p>\n<p><strong><span style=\"color: #ff6600;\">Step 3: Make the Filling<\/span><\/strong><\/p>\n<p>Once baked potatoes are cool enough to handle, carefully scoop out the flesh and mash in a mixing bowl with butter, yogurt and salt and pepper.<\/p>\n<figure id=\"attachment_7298\" aria-describedby=\"caption-attachment-7298\" style=\"width: 394px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-7298\" src=\"http:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2026\/05\/Twice-baked-Prep-2-1-300x225.jpeg\" alt=\"\" width=\"404\" height=\"303\" srcset=\"https:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2026\/05\/Twice-baked-Prep-2-1-300x225.jpeg 300w, https:\/\/cookhappylivehealthy.org\/blog\/wp-content\/uploads\/2026\/05\/Twice-baked-Prep-2-1.jpeg 640w\" sizes=\"auto, (max-width: 404px) 100vw, 404px\" \/><figcaption id=\"caption-attachment-7298\" class=\"wp-caption-text\">Note the sun-dried tomatoes soaking in a small bowl<\/figcaption><\/figure>\n<p>To the mashed potato mixture, stir in about three quarters each of the chopped bacon (or Pumfu), chopped tomatoes and green onions.<\/p>\n<p><strong><span style=\"color: #ff6600;\">Step 4: Fill and Bake Potato Shells<\/span><\/strong><\/p>\n<p>Scoop filling into potato shells, lightly packing it in.
