{"id":936,"date":"2010-10-12T15:51:23","date_gmt":"2010-10-12T15:51:23","guid":{"rendered":"http:\/\/cookhappylivehealthy.org\/blog\/?p=936"},"modified":"2017-11-08T16:05:07","modified_gmt":"2017-11-08T16:05:07","slug":"officially-end-of-summer-dishes","status":"publish","type":"post","link":"https:\/\/cookhappylivehealthy.org\/blog\/officially-end-of-summer-dishes\/","title":{"rendered":"Officially End of Summer Dishes"},"content":{"rendered":"<h3>Two Farewell Dishes to the Late-Summer\/Early Autumn Vegetables<\/h3>\n<p>A few yellow summer squash are still dribbling in from my garden.\u00a0\u00a0 The previous post&#8217;s &#8220;<a href=\"http:\/\/cookhappylivehealthy.org\/blog\/2010\/10\/11\/spice-blends-the-lazy-persons-way-to-fast-and-flavorful-veggies\/\" target=\"_blank\">vegetables-as-afterthought<\/a>&#8221; approach would have us serving them sauteed.\u00a0 Period.\u00a0 Too bad.\u00a0 Just a little extra effort could turn them into something so much more satisfying.\u00a0 Check out two ideas that employ the simple power of high-quality dried herbs and an herb blend to punch up ordinary vegetables:<\/p>\n<p><span style=\"color:#008000;\"><strong>Yellow Squash with Tomatoes, Peppers and Oregano<\/strong><\/span><\/p>\n<ol>\n<li><img loading=\"lazy\" decoding=\"async\" class=\"alignright\" src=\"http:\/\/i722.photobucket.com\/albums\/ww230\/mcolletterogers\/Tomatoes_Squash_Beans_Carrot3-1.jpg\" alt=\"Beautiful End of Summer Vegetables\" width=\"259\" height=\"199\" \/>Saute 1 medium green pepper (cut in 1\/2&#8243; squares) in good olive oil,\u00a0 over medium-high heat, for 2-3 minutes.<\/li>\n<li>Add 2 medium-sized yellow summer squash cut in half moons and continue sauteing 4-5 more minutes, being sure to season with salt and pepper.<\/li>\n<li>Add 2-3 medium tomatoes, cut roughly into 1&#8243; cubes and cook another 4-5 more minutes, until peppers and squash are cooked to taste and tomatoes are just beginning to soften and release their juices.<\/li>\n<li>&#8220;Crush and Sprinkle&#8221; 1-2 tsp. dried leaf oregano (the Greek version if you can find it) over the dish (<a href=\"http:\/\/cookhappylivehealthy.org\/blog\/2010\/10\/11\/spice-blends-the-lazy-persons-way-to-fast-and-flavorful-veggies\/\" target=\"_blank\">as  directed in previous article<\/a>) and stir in.\u00a0  Cook another minute to allow flavors to meld, then taste and add more salt and pepper and even a pinch of sugar if dish tastes too acidic.<\/li>\n<li>Serve and enjoy the lovely combination of yellow, green and red.<\/li>\n<\/ol>\n<p><strong><span style=\"color:#008000;\">Yellow Squash with Arugula, Bacon and Herbes de Provence<\/span><\/strong><\/p>\n<p>Besides <a href=\"http:\/\/cookhappylivehealthy.org\/blog\/2010\/10\/11\/spice-blends-the-lazy-persons-way-to-fast-and-flavorful-veggies\/\" target=\"_blank\">spice blends<\/a>, bacon is another lazy cook&#8217;s trick for adding instant flavor to dishes.\u00a0 Although it has earned a reputation as a nutritional bad boy, just one or two slices are enough to jazz up this dish.\u00a0 What&#8217;s more, no additional fat is needed to saut\u00e9 the vegetables.\u00a0 Finally, since so little is needed, it can be affordable to use bacon from humanely-raised pigs made with nothing other than pork, spices and sugar (no nitrates or other chemicals needed for great flavor.)\u00a0 Note how the yellow summer squash in this dish is paired with cool weather arugula for a stunning color combination.<\/p>\n<ol>\n<li>Fry 2 slices of lean bacon, cut in 1\/2&#8243; pieces.\u00a0 When lightly crisp, remove to a plate.<\/li>\n<li>In the rendered fat, fry 2 medium-sized yellow summer squash cut in half moons, for about 4-5 minutes, being sure to season with salt and pepper.<\/li>\n<li>When squash are just beginning to brown, add 1 bunch arugula, stems removed and leaves cut roughly into 1-2&#8243; pieces.\u00a0 Cook just long enough to wilt arugula.<\/li>\n<li>&#8220;Crush and Sprinkle&#8221; 1-2 tsp.
