Inspiration
Hi Mary, I can’t tell you how much your class was an inspiration to me. I took this class because I was bored and wanted to do more fun stuff with veggies. I found class to be an inspiration to rejuvenate my taste buds and get excited about cooking again. Last night, I tried another new recipe, African stew with sweet potatoes, cauliflower, collard greens, interesting spice combo and it was yummy! Thanks again for the wonderful cooking tips.

Learning to Cook–It Doesn’t Take Long
I like being able to cook my own food now. I don’t have to go to Whole Foods or somewhere else and get prepared food that’s really expensive and has a lot more calories than I want. Six months ago I couldn’t imagine being able to do this.

I actually like to cook, but always said I couldn’t and thought I couldn’t because my sister is such a great cook. I thought that’s what “cooking” had to be like–a big and fancy production. But now I see it can be very simple and still taste great. Like I just made a butternut squash soup and it was fantastic. The best thing I have ever made! I went to the Savory Spice Shop and bought some herbs. I borrowed a Moose Wood cookbook. I made a white bean soup last night. I’m excited, but I miss the Thursday ritual of cooking class.

Just wanted to share with you that I made the tastiest healthy soup this evening using leftover chicken breasts and good veggies from the fridge. It was quick, easy, and delicious, and I couldn’t have done it before your class. I’m so proud of myself!

FUN! (Even Meal Planning!)
Last month I took Mary Collette Rogers’ “healthy cooking” class and I just had to shout out how great it was. Mary is sparkling and funny and energetic and she knows her stuff. I learned how to cook food that is not only healthy but delicious. (Before, those two characteristics seemed fairly incompatible to me.) I learned this is a lifestyle and state of mind. I can’t gush about her enough.

Class was great and I had a lot of fun. The menu planning information was the most helpful part for me. I was a decent cook, but needed to have 4-5 things ready to go for the week. The meal planning we learned about is helping a lot.

Weight Loss Inspiration
it has been better than words will describe joining Mary to learn cooking seasonally and sustainably, and especially deliciously!
